The BEST Birria Tacos I’ve Ever Made! 🇲🇽🌮😍

- One of my favourite recipes!
It’s a labour of love but well worth the time and effort. The result is ultra slow cooked and tender, pull-apart beef, in a rich and deeply spiced broth that coats your mouth in umami. The cheese here is important but if you can’t get your hands on oaxaca, just use dried mozzarella! Low and slow for maximum flavour.
This is the first time I’ve uploaded a longer-form recipe video - let me know what you think and hope this makes things slightly easier to follow for those of you who want to make this at home!
Enjoy! #NotoriousFoodie 🙅🏽♂️

1. Get yourself 1kg of beef or lamb - I used short rib, chuck and oxtail - season with sea salt and leave to brine in fridge overnight
2. Pay dry, then sear in hot pan laced with neutral oil for 2-3 mins per side in batches, set aside
3. Throw in 1 diced white onion + 4 cloves sliced garlic, season & sauté ~5 mins then add in 4tbsp tomato paste and cook ~3 mins
4. Add in 3 diced tomatoes, then add back your beef, cover with beef stock and bring to a simmer
5. Toast your spices on med heat 2 mins then add them all to the broth: 3x guajillo chillies, 3x arbol, 2x ancho, 3 bay leaves, 1tbsp coriander seed, 1tbsp black peppercorn, 1x cinnamon stick, 1tsp cumin seed, sprig of thyme. I also add 1tbsp tinned adobo chillies
6. Cover with lid and leave to simmer 1h, then remove chillies and blitz with 1 ladle of the broth. Add this back in to broth and leave to simmer additional 3h
7. Remove the beef and add to bowl with 2 ladels broth, cover with foil, let rest 1h - this is how you keep it juicy
8. Shred the meat and add 4-5 tbsp broth, then set aside
9. Allow broth to reduce further and season to taste
10. Toast your corn tacos on med heat for 1-2 mins, then dip into the broth before laying onto a med-high skillet laced with beef fat
11. Add a handful of shredded oaxaca cheese, allow to melt 1 min, then add 2 heaped tbsp shredded beef, 1tbsp broth and carefully fold over - allow to cook 1 min more then remove and repeat
12. Serve up with a bowl of your broth topped with diced white onion, coriander and a squeeze of lime - I paired with some @claseazulofficial Mezcal Guerrero!
PSA: When making Birria, only dip the tortilla in the fat that rises to the surface of the consommé in the pot. Dipping the entire tortilla in the stew will make it soft, not crispy. Authentic Birria requires a crispy outer shell, achieved by dipping only in the oil.
Took me months to realize that
I've been following your channel for months now and believe me that all your dishes are perfect. but this dish of birria tacos, hermano te la rifates, they are the typical street tacos. Saludos desde puerto Vallarta, Mexico.
Love the detailed version.. the Labor of Love is more appreciated.. Thank You Raja 🙏🏼🙏🏼👑❤️
EVERY dish this guy makes looks spectacular!
Fantastic. Thanks so much for going long form & the notes are very helpful.
You're very welcome!☺️
Everything you make comes out perfect ❤
I love the longer style video!
I think this would’ve had 10 million views if the thumbnail was of the finish product next to the sauce 🫶
OMG I'm actually furious that ive only just realised that you have a YT channel...ive neen following your recipes for over a year on Instagram and only now just saw a mention of YT channel where you do longer breakdowns of your recipes!! I have been missing out all this time!! Great work bro, I'm here to stay now haha
Do you deliver😁 you got skills bro, everything you make looks class👍🏻
Just made this yesterday! Made fresh corn tortillas, too! DELICIOUS
Excelente birria. Saludos desde México 🇲🇽
I am totally making these!
Hi my friend 🧡 your cooking is awesome 👌 so yummy and tasty 😋
Hey man, I SERIOUSLY love the recipes, my mother is a professional chef and I like cooking as a hobby, I’ve watched MANY cooking accounts on every site. I must say, you are, by far the best I’ve ever seen. I always viewed cook books as “not worth it” maybe because I can already cook and stuff… but if you dropped a book, I’d buy it without even thinking, do you ever plan on dropping one?
Oh my yum.
Literally salivating over here.
Ya dude, those look good
Whenever I make dope ass food I eat it over the stove too.
Let’s taco bout how bangin’ these tacos look, let’s taco bout loooove
Got me with the towel at the end. I flinched.
Majestic. Anyone else wish bro would get himself a chair?
My guy knocked back 4 of the tacos. 10/10
Sa semble délicieuse 😊essaie d'accompagner cette sauce avec du couscous de mil trop bon 😊

Long videos are better.
Proper tasty 😋
10/10 🔥
Pero el mezcal es con birria de Chivo o de borrego
A esos tacos de birria yo les pondría una cerveza 🍺, no mezcal, pero cada quien es libre de tomársela como quiera 🥴
Please could tell us what butcher do you use and what beef stock do you use as well. It in UK.😊
Finally the cheeses and chilies are accessible, but still can't find a good quality stock
maek yur one stok! is very eesy. i ken not write good but stok no problom
😍😍😍😍
First time I'm catching one of your vids on YT... is the no-music just here? Just curious - I actually like the ASMR.
Wow, Wow, Wow....They look incredible. HOWEVER, I am very jealous my friend, as you showed that gorgeous bottle of Clase Azul Mezcal Joven Guerrero Tequila! Be careful as you don't want that work of art competing with your "food art". lol
Great video! What was added to the pot after the neutral oil before searing the pieces of meat?
Beef fat!
Where do you get your beef tallow from? Looks nothing like the white stuff available in supermarkets
@@joenewton1988 homemade! Reserved from a previous recipe
Where is your chopping board from??
What is the spray he uses to clean the chopping board - it can't be a bleach spray or the food would taste gross
the tail would not go that easy with forks but the camera didn’t show it
Bro I deactivatd face book And here in youtube you have no sounds😭
I loved your music..
My problem with Mexican food is that they use a lot of coriander which tastes like soap to me and therefore ruins the the dish (damn you genes).
What can I use instead of that? Any suggestions?
My girlfriend also has this problem, it is a genetic thing. The coriander seeds you shouldn't be able to taste, only fresh coriander, but I would like to know if anyone has other suggestions. Parsley can work with some dishes.
I believe there is a herb with similar taste called “culantro”. I have no idea if that one also tastes like soap for some people.
just dont use it, it wont take away from the dish
Looks delicious. What kind of cheese was that?
The dude's a pro so I imagine it's oaxaca cheese.
@@time-to-pause a pro indeed

How many people does this serve?
I just watched it 💀
I went to Wahaka Taco, expecting this, and got a floppy yellow chewy corn tortilla, with just Barbacoa onion and cilantro…. no sauce or cheese. feelsbadman
they did give you lime wedges tho lmao
no way
What is beverage?
Clase Azul Mezcal Guerrero
@@alphatube3955 great tequila which comes in handcrafted BEAUTIFUL bottles!!!
What’s the gelatin shit he puts in with the broth that’s not in The recipe Lol
beef stock
More beef stock. More than likely, homemade and concentrated to add flavor but not more liquid.
I'm HUNGRY.😪😪😪
What tequila is that 👀

Stopped watching as soon as I saw you using beef.
Birria was originally made with goat, and that the way it tastes best.
Not even close.
It frustrates me that here in LA, taco trucks that use goat are few and far between.😮
Chivo taste nasty beef is better nobody likes goat
@@geeejeee8885 Goat is the most eaten meat on the planet.
So obviously, plenty of people love goat.
It's actually pork that's most eaten :/ @@pandstar

They looked good, but to compare them to anything you get in Mexico is laughable. That’s not a knock on him. It’s just like comparing it to a master chef
To leave a back handed compliment without offering a shred of advice is what's laughable. & really, anything in Mexico? Really? Anything?

@@NOturtle Brother, I hope you're doing well. I forgive you for being who you are on the internet. I hope you lift others up one day, and not tear down their efforts.
I'm all for dark, and mysterious humor, but I don't detect that in you. You sound insecure really, probably posturing yourself to be some sort of good food detective, or at least a skeptic of the work of others.

No one uses goat. So, that's just stew
Azul is over priced garbage, try Ocho
That is not authentic Birria.
Boooo for dumping the chile seeds any real chef would leave them and readjust heat as needed at the end. Chile wimps should not cook
Seeds on these dried chillies can add a very unpleasant bitterness
