      @@KetoAsianFlavours in the fridge now. I think I let it a little too long on the stove, getting a little thick compared to video. I also may try with less sugar, my girlfriend is Chinese and find it too sugary. Says Canadians eat with too much sugar. 😜

    Allulose is the best sugar substitute. I use it for everything. Including baking, chocolates, ice cream, condiments.

    I just made this today. Bought all ingredients and it was a success! I’ve tried other keto Caramel recipes and they all crystallized. This one doesn’t. I made Keto Chocolate Turtles with this caramel and my husband loved it. Thanks for sharing this recipe! 👏🏼👏🏼👏🏼

    Thank you for continuing to share you knowledge of all the gums! What is the purpose/usage of the first version versus the second version. The second version seems a bit thicker in the video - perhaps better to mix into your fabulous no-cook ice cream?

    Can I substitute L-glycine for the Allulose? Allulose is not an option for me due to digestion problems with it.

      It gives some people intestinal issues and won't give the same "stretchy" effect as guar and acacia.

    Hi Ann! Can I skip the guar gum and just double the gum arabic?

      Good question! I haven’t tried it yet with just gum Arabic. I use a mix of guar gum and gum Arabic in my recipes for a reason. From my experiment and research, guar gum gets stretchy when given time in heat and then in cooler temperatures. The gum Arabic and allulose also contributes to the viscosity of this caramel recipe.

      @@Lucidchronicles because it is not approved for human consumption here, it is not available on the market. I could order it from USA and 1) pay exorbitant postage and 2) risk paying all that and having it seized by Customs (I know 2 people who've had that)
