    Xanthan Gum doesn't really addon the pounds, it's not like high fructose corn syrup or processed white sugar from sugar cane.
    There are types of sugars that are natural sugars that do not spike the GI and do not add belly fat. Fructose is one of those, which is why diabetics can eat a reasonable amount of berries or honey and it remains good for them. It doesn't cause a huge spike in GI and it doesn't show up on an A1C test because it doesn't cause the problems diabetics have with processed sugars. Many things are made with fructose and so long as they don't have any added sugars or any HFC they are also safe for diabetics to eat. I learned this from my dietition who specializes in diabetes because I got diabetes from a malpractice issue where pain doctors were recommending back shots for fibromyalgia but did not warn me that these shots of corticosteroids would cause my blood sugar to skyrocket until one day I woke up and couldn't see clearly. I had contracted diabetes from the shots.

      That’s correct, xanthan gum does not add on pounds. Xanthan gum is not the culprit for Starbucks Frappuccino. It’s the sugar. Xanthan gum is keto friendly, but not many people know it is in the Frappuccino drinks. This is reason I’ve included it in my keto recipe and have substituted out the sugar to stay true to the Starbucks recipe.

    Didn't You teach us in xanthan vs acacia & ice cream videos that acacia is a less slimy thickener?
    But in this we want more slime, less stick? ;-)
    Just curious... Sorry to ask too many questions.

      Gum Arabic is less slimy and has better texture in most recipes. The comparison video is in response to my riceless paper recipe, where gum Arabic does make a difference. The ice cream recipe also needs gum Arabic. A few of my followers have tried it with xanthan gum and they agreed it did not work as well. This video is to show everyone what Starbucks uses to thicken and how to make a copycat of their drink using substitutions. At the same time, staying true to their recipe by using the same thickener, which is xanthan gum. I would prefer to use gum arabic or guar gum, since those are better for cold applications. Xanthan gum is cheaper vs gum Arabic or guar gum, so many commercial companies tend to use that instead. For the Starbucks Frappuccino, it works with all the other ingredients blended together. It’s served right away after blending, and somehow it works. I gave the option for quantity (1/8-1/2 tsp) because not everyone can tolerate xanthan gum’s slimy texture.
