- The third in our flourless egg white range, these tortillas are soft when warm and firm up as they get cold to about the same firmness of a regular tortilla. So they would be great to shape them how you like when warm...perfect for tacos. In this video we show you the results of the experiment and the various tests we put them through.

Taco Shells/Mini Tortillas - Serves 5
Nutritional Information/Serve:
Cal: 148 | Net Carbs: 0.6g | Fiber: 0g | Total Carbs: 0.6g | Fat: 12g | Protein: 11g
Large Tortillas - Serves 3
Nutritional Information/Serve:
Cal: 246 | Net Carbs: 0.9g | Fiber: 0g | Total Carbs: 0.9g | Fat: 20g | Protein: 19g
Ingredients:
180g Powdered Cheese (equates to 2 cups less 1 tbsp)
4g/ 1 tsp Baking Powder
3g/ 1 tsp Gelatin Powder
6g/ 2 tsp Xanthan Gum
2 Egg Whites (1/4 cup or 60g)
Pinch Cream of Tartar
Vegan Substitutions:
Use Almond Flour to replace the Cheese
205g/2 cups Almond Flour
Use Agar Agar to replace the Gelatin
You will need a little fat so the dough is not dry, about 1 tablespoon.

I skip the fluff the egg whites. Iâve been doing this for years Iâm surprised more people havenât cut onto it however I donât take the yolks out because thatâs where truly all of your nutrition is. If youâre going to eat an egg eat the yolk thatâs where the love of God comes from! Nice video

Egg yolk seems to exacerbate Rhumatoid Arthritis. Cheese is not good as well for RA. They are inflammatory food. If you have been doing these for years and no effect on you, good for you.
generally i would go 1 full - 2 whites. Yolk is where all the fats and vitamins are but its also stacked with calories that add up quickly. There is 3-4 times more calories in a yolk than the white.

Eggwhites allow us to skip the grains but still have ânormalâ meals
For goodness sakes, donât throw out the yolks! Melt them into ur coffee or make keto ice cream, throw them in a pan of eggs ur scrambling, and wrap up in the egg-cheese wrap đ
Some carnivore eat them slightly warmed in a bowl, with their meat or to dip the meat into. Kind of like a soft boiled egg idea. Raw yolks have more nutrition preserved. Whites do better cooked.
I would like to add that you can put the tortilla in the pan with the parchment paper on the BOTTOM. Cook the first side, flip them over together, and the paper will peel right off when the tortilla is ready. This method can also be used for many other delicate foods like breads, pancakes, eggs, fritters, fried cheese, etc, or even if your pan isn't nonstick

Does it still brown that way?
Seeing this comment 1 year later, and I had issues with the dough just completely adhering to the parchment paper. I had thought to maybe to just cook the one side with the parchment paper first, but I wasn't sure. Nice to see it is mentioned. Could you also maybe refridgerate the dough after mixing?
Does the first side put down with parchment paper become browned ?

We also made enchiladas with a red sauce that was so good that we canât tell the difference between Melâs recipe and the flour tortillas.
We make a bunch and freeze them for later . I highly recommend her recipe.

Made these today âŠâŠâŠ. first one was a disaster đ”âđ«, used my tortilla press and covered it with baking paper (not a good idea) the mix stuck and I had to scrape it off. I flattened it out and still cooked it, tasted great just looked nothing like a tortilla đ.
Then I covered the press with cling wrap âŠâŠ.. what a genius I am đ€Łđđ€Ł, this worked a treat and ended up with tortillas that actually looked like yours. So happy, so now we can have pulled pork with salad in wraps for dinner âŠ.. yay!!!

OMG, I made the spinach and egg tortilla right away and boy, they taste delicious đ đ. I added my favourite spices to the mixture then blended it all, cooked using 1 x calorie spray olive oil...yummy. Better than the flour tortillas in my opinion â€â€. Thank you sooooo much đđŸđđŸđđŸđđŸ

Welcome to the channel and thanks for the support. I think it could work but I haven't tried it to be honest. Just a tip, when getting your cheese do go for low sodium. I really they turn out great and you enjoy them.

These look amazing! I canât wait to try them. Have you tried cutting into triangles and putting them in an air fryer for chips? I tried using a so called keto tortilla that had some flax in them but they didnât crisp enough before burning. You recipe looks promising to me. Hi Mel, these tortillas look amazing . I'm mostly impressed with how pliable they are in video. However, my first batch didnt come out that way. I can fold them over in half but thats it. They seems to crisp up a bit.
I'd really like to make them as pliable as they are in the video. I'm interested in making breakfast burritos with them. anyone have any suggestions ? đ
Hello Joe. When cool they do become stiff. Did you test them when warm? If you still have them you could warm them by reheating in the frying pan then shape them to how you like. When cooled they take the shape you created them in. Please let me know if they were crispy even warm because all the above would not be helpful.

The egg white tortillas you can buy, aside from being expensive, were just a little weird. Certainly doable and it was nice to make some fajitas with them. But the rubberiness was nothing like a tortilla. Looking forward to trying Mel's.
Maybe worth pointing out that two corn tortillas only have 21g carbs (19 net). That's enough for me and 19g is well below my threshold for staying in keto as long as the rest of the day is in check. Still hoping these low-carb versions make the cut.
