  • I'm talking about a knife sharpening system I've had for a long time. I've been meaning to make a video about it but never did until I saw the video by "beactivelife" ( / beactivelife ) and his new knife sharpener. His sharpener is more compact than my system is :-}

    Excellent coverage on this knife set! I've had this exact knife set for years, but never knew what I was doing with it. Watching your video answered all of my questions and i've already sharpened 3. Eyeing my wife's Wustoffs!!

    Good sharening systen Ray.
    I still think you should strop your knives along the leather. That way you are taken away any small pices of metal at molecular level. You can't see that fine with a hand magnifier. That way your knife will be sharper and stay sharper for longer. I think! hope I'm right! Hi
    All the best

    To flatten the Arkansas stone get some glass and fine diamond grit, apply some oil to the diamond grit and smear some on the glass, rub your stone across it and it should flatten out after a while

    I've never tried using a "W" pattern to sharpen with. I also haven't been able to get a razor sharp edge with this system. I use a ceramic "V" sharpener to get them to razor sharp for the final strokes. You can see the system in my "Sharpening System Bag" video. I hope this helps ya :-} Thanks for watching and also thanks for taking the time to comment. Take Care :-))

    what you can do for that stone that dished out on you is take it out in the concreat and flatten it back out just make sure its a finer mesh though or you can take like a 80 grit piece of sandpaper on a palm sander and do it like that just make sure to take it up to like at least 600 grit to take that really deep scratches out of it well i hope this helps you

    I’m a little confused. Everything I have read in sharpening has said you must have equal amount of strokes on each side to create an edge. How on earth cld you do that with the way he is sharpening? I bought this sharpener the other day bc I am having a hard time getting a burr on a wet stone. Even bought a ken onion work sharp and the same thing. I do not know what it is I’m missing here. But making sure you had equal strokes was paramount I had thought

    • @SurviveN2
      @SurviveN2  Před 2 lety

      Brewster, your not after a burr on the cutting edge of whatever your sharpening guy, if you end up with a burr...your taking too much metal off, sooner or later you won't have a blade left to cut with 😳 Sharpness isn't about the amount of Burr you get, it's about the Blade Angle 😉 Equal amounts is good yes, but it can be 20~20 guy, you don't have to be 1~1 😉 You can slowly decrease the amount of strokes, it's true this system doesn't lend itself to sharpening knives easily, you have to think outside the box with it 😉 Don't put a lot of heavy pressure on the stones, use light pressure and keep an eye on the blade edge as you go along 👍 The thing it does do, and do well, is to keep the angle correct on the blade edge for those people that struggle in that area of sharpening 😉 To be honest I don't use this set anymore, I have Japanese water stones that I do most of my sharpening on 👍 Then if things start to get dull I'll just sharpen them up with 'Ceramic' rods and they're A'Ok 😉 (You'll will find videos on my channel.)

    • @brewsterhudson1182
      @brewsterhudson1182 Před 2 lety +1

      @@SurviveN2 Thx for your reply. But to be honest I'm more confused now more than ever lol. You said I'm not after burr on the cutting edge of my blade? I thought when u have a dull knife you were supposed to start with a course stone so that u get a burr...& if u don't get a burr, you haven't reached the apex? The way that I have been testing my knives after sharpening has been to run it down my arm to see if it shaves hair off (only bc that's what I've seen people do in videos). I have literally NEVER shaved a single hair lol. I've spent soooo much time and effort trying to learn to sharpen that it's becoming so damn frustrating. Any advise you cld give will be greatly appreciated. Thx

    • @SurviveN2
      @SurviveN2  Před 2 lety

      @@brewsterhudson1182
      OK Brewster, not sure where you've got your sharpening info from but you NEVER want a burr on the edge of your blade when your sharpening it !! To me that tells me your sharpening the blade in the wrong direction !! Argggg Or maybe your doing it the right direction and trying to put too much pressure down on the blade edge in order to get a burr.....either way...it's not good !!!!
      The point of the blade should be the first thing that touches the stones or sharpening machine, and the knife should always be pushed or pulled with the point leading the way. You always want to take the least amount of metal from the blade but still get it as sharp as possible. By creating a burr, your taking too much metal off the blade !!
      You want lite even pressure when sharpening.
      You can refer to my last comment about strokes and so forth, I stand by that. Like I said in that comment, I do things by hand, slowly and looking at the blade as I go.
      I don't use Oil on my stones, I use water on my stones. If you have stones and you've used oil on them already, they can't be used as water stones. Once I get my knives sharp I usually don't have to use the course stone again unless I've severely damaged the blade edge. Normally if the blade gets dull, I just have to use my 'Ceramic Rods' or in very rare cases I'll have to use the fine stone to get them back into shape. My Ceramic Rods will get my knives to where I can shave with them, although to be honest I'm not going to shave with them....I just want them to cut, and they do that very very WELL!!
      I don't show a lot Brewster but you can see my sharpening kit if you search my videos, there are 3 videos. The 'Ceramic Rods' are a Smiths product also, I just searched and they don't make them anymore. But there are others like it on Amazon. I hope this helps guy.

    I’m just learning. I bought this system today and watching vids, everyone has their own way 2 use the system. The best vid I’ve seen is a guy saying 2 use a ‘W’ motion with your strokes pre the instructions. He said that he tested with different strokes because he wasn’t getting the edge that he wanted using strokes he use with stones. He said using the ‘W’ strokes certainly makes a difference. Is there any truth to this? I cant seem to get that razor edge that everyone keeps talking about.

    Thanks :)

    • @SurviveN2
      @SurviveN2  Před 8 lety

      Thanks for your kind comment Sara, and also thanks for watching too ;-)) The type of stone to use would depend on just how dull the blade is and how much metal you'll be needing to take off to start to get an edge back on it ;-)) I would not go straight to the course stone unless you really have to. I have ceramic rods and try to use them to put edges back on a dull knife before I resort to sharping stones. Usually the ceramic rods will do the trick, I think they are a Smith's product also. Search my videos for "Sharpening" and you'll find 4 other videos beside this one and you can see what I'm using. IMO.....The size and/or shape of a blade really doesn't govern what texture of stone to use, it's how dull the knife edge is that governs what texture of stone to use. I hope this helps with your questions. Take Care :-))
