  • I'm back with a recipe video! It's a rich and super chocolatey cake.
    I love the crunchy almond bits in the glaze and caramel sauce on top.
    It's just heavenly if you are a chocolate lover.
    I hope you like it!
    Chocolate sponge
    Chocolate 55% 200g
    Unsalted Butter 30g
    Milk 20g (Warm)
    Egg yolk 60g (Room temperature)
    Sugar 45g
    Cocoa powder 20g (Sifted)
    Egg white 90g (Room temperature)
    Sugar 45g
    Bake at 350F for about 13-15min
    (Time can be different depends on your oven and the size of your pan)
    Ganache
    Dark chocolate 55% 100g
    Heavy cream 120g
    Corn syrup 20g
    Unsalted butter 20g
    Glaze
    Dark chocolate 55% 180g
    Vegetable oil 30g (Canola oil also ok)
    Almond 50g (Toasted)
    Chocolate Cream
    Ganache 40g
    Heavy cream 90g
    Salted Caramel Sauce

    *Yield : You can make 5 cakes.

    무염버터 30g
    우유 20g (전자렌지에 아주 짧게 돌려서 미지근하게 만드시면 돼요!)
    달걀 노른자 60g (실온상태)
    설탕 45g
    코코아 파우더 20g
    달걀 흰자 90g (실온상태)
    설탕 45g
    180도에서 약 13~15분간 구워주세요
    Bake at 350F for about 13-15min
    (오븐 사양이나, 팬 크기에 따라 시간이 달라지니 유의하세요!)

    지금 이거 만드는데요..(굽는 중) 실내온도가 낮아서(추운 겨울도 아닌데.20도 정도) 그런건지 초코반죽이 굳어서 흰자랑 잘 안섞이고 최종 반죽도 초코 덩어리들이 곳곳에…ㅠㅠ2배합했는데 ㅠㅠ 엉엉 혹시 반죽온도를 따뜻히 유지하여 유동성있게해주고 흰자랑 섞어야하나요? 그럼 흰자 머랭이
    괜찮을까요.. 속상해요.제대로 구워질지 ㅠㅠ

      네ㅜㅠ 반죽이 차가우면 초콜릿이 굳기 때문에 모든 재료가 실온이거나 살짝 따뜻해야해요. 아이구 두배합이나 하셨는데 제가 다 속상하네요.

      @@sundaybaking 재료는 실온이였는데~ 흰자 휘핑하는 동안 초코반죽이 굳었더라구요.다 구웠는데 시트가 산산조각…너무 촉촉하고 진하고 맛있는데 빵 질감이 아니라 부셔져요.왜그럴까요? 밀가루가 안들어가는게 맞죠? 다시 해보자니 또 이럴까봐… 아까운 초콜렛 ㅠㅠ 사진도 찍어놨는데. 맛이 조아서 아쉬워요

    만들어봤는데... 영상에서는 가나슈 만들때 주의할점을 따로 말씀해주지 않아서 가나슈가 굳지 않았어요... 냉장한 후에도 흐르길래 찾아보니 가나슈는 온도 조절이 중요하다네요..! 그런 정보가 더 있었으면 좋았을듯해요ㅎㅎㅎ 그리고 글레이즈가 식용유를 쓰는데 식용유 맛이 확느껴지는데... 무슨일이죠ㅠㅠㅠ 재료 몽땅버렸네요...
