This Very EASY & Simple to make Vietnamese Spinach soup is so good, it hit a spot, so satisfying. My go to Spinach soup recipe. I learned this from our Vietnamese friend. I added a bunch of Purple Dead-Nettle from the garden they smell like malabar spinach
This delicious soup is good for my blood count, rich in iron, gives me optimal coverage and helps me get through the day. I'm sure you'll love this soup once you try it, too. I've had this spinach soup in my repertoire for a while now because it's always good for me - I feel much fresher and have more energy! It hit a spot every time I eat it. You can also have this soup very well with a glass of water for the evening meal before dinner or for breakfast in the morning.
