If you have a toddler that doesn’t like vegetables, try this | canh mồng tơi | Malabar spinach soup

- MALABAR SPINACH SOUP | canh mồng too
1 bunch Malabar spinach
1/2 lb shrimp
11 cups water
Minced garlic
1 TBSP fish sauce
1 tsp salt
1 TBSP chicken bouillon
1. Separately ur Malabar spinach into 2 piles- one pile with all the large stems and the other with the leaves and small stems. Discard the large stems. With the leaves, cut it thin. It does not need to be perfect
2. Rough chop 1/2 lb of shrimp. Add 1 egg yolk and season with salt and pepper. Mix well. Set this aside.
3. In a large pot, sauté some garlic until it’s nice and fragrant and golden. Then add 10-11 cups of water and bring to a boil.
4. Next, add your Malabar spinach and bring it back to a boil or until the edges start to bubble.
5. When the edges start to bubble, add 1 dollop of ur shrimp mixture. Do this 1 dallop at a time.
6. Next season ur broth how ever you’d like. I seasoned with: 1 TBSP fish sauce, 1 TBSP chicken bouillon, 1 tsp salt. Cook this until ur shrimp clusters float to the top. Then you’re done.
I was a really picky kid and can confirm I ate this up every time my mom would make it. So can confirm this Vietnamese soup is one of the best🤤

Try looking for other Viet cooking channels. I know there are some. I used to follow The Viet Vegan. Idk if she does childhood recipes, but she's VERY good at explaining things. She appears to have a baby now, so...maybe.
THAT'S THE SPINACH! I've tried making it myself but always used the baby spinach, and while it tasted good, it never tasted the same as when mom/grandma made it. Now I know I was just using a different spinach.
Guys I just tried it and it’s amazing!!! And very flexible and versatile. I didn’t have all the ingredients so I added scrambled eggs, fish cake, and chicken dumpling and taste just as great. The funny is the spinach itself doesn’t taste that interesting but when added to soup its a diff level ❤❤
FYI some Asian stores may label this as “wood ear spinach” / “Mu Er Cai”/ “black fungus veggie” bc in Chinese it’s called “木耳菜”, just found out today, and I will def try this 😋

Malabar Spinach! We make a type of curry paired with horsegram or unripe papaya in the southern coastal region of India. Very tasty and good for gut health. We add the bigger stems also in the curry ❤ Loved this post ❤ such a healthy and delicious food choice for kids

You can swipe the shrimps out for just a plain soup, sometimes my mom cooks this with minced pork

My second time making this for dinner, but tonight I'm also chopping up some scallops as well as adding jumbo lump crabmeat to the shrimp mixture .. cannot wait to eat this. It's about 90 degrees outside and I'm making hot soup for dinner .. that's how good this is! 👍🍲

In India and the Caribbean we make a dish with this called Saag and you can eat it with roti or basmati rice and daal. Its so yummy. You just have to cook it with some oil, salt, chillis and garlic but literally cook it down till all the water leaves and it looks almost like paste but still leafy. Its sooo yummy

Hi i love spinach. My mom used to simmer the stems (to soften i guess) then sauté with soy sauce/oyster sauce, onion+garlic, and mushrooms. Its real yummy. Love your recipe videos!

Try minced chicken or minced pork, the beef gives a too strong need flavor imo
Lots of garlic and instead of fish sauce you can substitute with soy sauce but you’ll be lacking the unique umami from seafood ofc.
Maybe try adding a tiny amount of sugar to round it up.
Minced pork would be best!
You can try chickpea fritters(pakoras).
make a batter with chickpea flour and water. Add spices according to your taste. I add salt, chilli powder and turmeric along with some cumin seeds.
Then take a spoon, scoop the batter into hot oil and fry the batter till it turns slightly brown. You can eat the fritters along with the soup and rice. If you like the fritters to be crispy, don't add it to the soup otherwise add it to the soup so that it soaks up all the flavour from the soup.
Or you can also hard boil some eggs, cut them into halves. Then add a tablespoon of oil into a pan, add some spices like chilli powder and turmeric, salt, pepper, then fry the eggs in the spicy oil.

i'm young and single basically I admire you so much for being a dedicated mother so i'm curious about adults with kids even though i don't want to think about having kids/family yet but never give it up or say it higher because the future is relative and it's available to change so i'm still learning how to live while maintaining a healthy meals is fundamental to carry this forward in life with immunity and age extension while I'm young I want to learn on my own but if in the future I think about raising a family I'd like to be like you

My toddler absolutely loves all vegetables except for any type of leafy green. He doesn’t like the texture and can’t figure out how to chew lettuce for some reason 🙄 but I would definitely love this soup lol

We call it Poi Patta. We make Curry , Pakoras (fritters) with it. It tastes really good with Horse gram, potato+ its stem. It tastes really 😋

I made this yesterday and it was so good, my whole family ate it up...even got grandma's approval which is rare. I ended up using some adobo chicken seasoning to substitute the chicken bouillon. Also didn't have fish sauce so put soy sauce instead.

There it is! That's the spinach!!!! LOL. We have a similar soup, but I have been wondering why the spinach I'm using does not taste 'quite right.' My mom would always have that soup ready for dinner since as a kid I hated veggie.

In the Philippines it's called "Alugbati" commonly mixed with veggie soups as well. Most alugbati variants here have bright violet stems and grow violet fruits which we used a dye whenever we play.

Growing up, the only vegetables i could eat was only spinach and carrots. It help that it's not Bitter (rather sweet), and what i hate about veggies is how crunchy they are so afte cooking the spinach it will wilt, and number one : POPEYE, i eat that shit up as a kid. It really helps that mainstream media encourage positive behaviour like eating vegetables. Everybody wants to be as strong as popeye, including me. So if i could eat spinach everyday i would, lol.
