Ingredients:
1/2 lb shrimp, peeled and deveined
2 green onions
1/2 tsp sugar
1/8 tsp ground black pepper
1 tsp fish sauce
1-15 oz can chicken broth or make homemade stock with this recipe • Chicken Stock (Nuoc Su...
1 3/4 cups water
1-9 oz bag, washed and ready to eat spinach
1 Tbsp fish sauce (adjust to your taste)
Yields: 4 servings

I was brought up on meat, potatoes, and plain vegetables. I started trying a few Southeast Asian recipes and over the years have been adding recipes and trying to perfect my skills. I didn't like fish sauce too much when I started out and only used a little bit in recipes, now I've become addicted, use lots of it. and miss it if it's not there. I love Asian food. I started trying to make more Asian style foods and curry foods for health reasons. I grow Asian vegetables and I need to learn more of how they are cooked. I don't use regular spinach but I use Okinawa spinach, Amaranth greens, Gynura procumbens, malabar spinach, and Chinese water celery.

Yum! Can you please do more video on typical Vietnamese home meal?
The pounding with the pestle is to achieve a springy texture. The mincing by hand is so you still can see still bits of shrimp. It's a more organic looking meatball rather than being whipped and smooth like other meatballs. If you're looking to save time you can smash the shrimp slightly and then pulse in a food processor really quickly.

Can you use something else than the fish sauce? Like for instance soy sauce?

Does it taste similar to using Chinese greens? I want to try it but I'm just so use to the authentic Vietnamese version.
+Chyna Mercado The spinach is milder tasting where as the Chinese greens can be somewhat bitter and more fibrous. I hope you give it a try. It's a great alternative.

Old Bay seasoning isn't quite right but if that's all you have, it's better than no spice. Keep looking for the 5-spice powder. It's an essential spice in Viet cooking! :)
