- This very playful creation is composed with a yellow cookie (lemon ganache and vanilla lemon sable with a thin shell of crunchy white chocolate) and a red cookie (raspberry ganache, vanilla crunchy sable and a thin white chocolate shell).
The grid is made out of white chocolate colored in blue and is fully functional.

Everyone’s always impressed with his creations (obviously) I’m impressed how he manages to have a immaculate clean white chef coat.
Same, especially using a spray gun and working with chocolate dyed bright colors. My coat would be a massive rainbow mess a quarter of the way through this.
I'm impressed that he looks so good despite the fact that he seems to eat a lot of chocolate. Lol
And his sheet pans as always clean and perfect.
I was thinking that lol, I can't make toast without getting covered in butter

I'm not only impressed by his artistry, but also for the functionality that some of his creations have! This was a fully functional game made entirely out of confection! It's amazing! He's a talented artist and he knows how things work!

Always been curious how cold it is in the room. I feel like it has to be fairly chilly to keep everything solid.
Chocolate is very finicky. Temperature, humidity are super important. If you can control that, you are ahead of the game.
Probably just cool enough. Because for sure chocolate is not recommended for refrigeration, eg.
But I bet the counter surface temperature is probably regulated (?)
And are you impressed with the robotics of circle cutting? 😂
Amazing what one can achieve having talent, perseverance and starting YOUNG!
Also his chocolate will be tempered and this helps it not to melt at room temp. I mean you go to the store and all the chocolate bars aren’t melted. You would stabilize the chocolate to make it tolerant to room temp

Good chocolate does soften in your hand. For sure. Not instantly but it does. Doesn’t run liquid, but it does not remain intact.

I literally had to watch it in slow-mo to catch that tiny space that wasn't spray painted. I think the only way to avoid that would be if he shad painted each piece before attaching them, but I don't think it would have turned out as well but that's just my thoughts
