- This fully functional chocolate mailbox holds my 2022 Christmas log. Its composed with a duo color sable base, a raspberry ganache, a raspberry sponge, a yuzu and fresh raspberry compote, a light raspberry cream, and a vanilla mousse. You cannot get any if you're on the naughty list.

You are most definitely The God of Chocolate!! I wasn't sure how I would feel watching these after seeing some of the techniques you show in School of Chocolate, but it still absolutely blows me away. It may be even more amazing having some small inkling as to the techniques you use.

Man, this is a love language for me. The creativity, the thoughtfulness on every level, the ingredients, the care and precise movements, and the way you think of every single detail. It's all so magical to me.
P.S. I see the Drummer Boy in the background. Is that the chocolate one you made, or is it what you use for inspiration? I'm curious to know if you think of every detail or if you use something already in existence and perfect it using chocolate and mastery.
Obviously this guy is an artist/engineer and his work is outrageously incredible looking, but lately its been the cakes for me. I mean that cake thing looked mind bendingly delicious.

This is my first time checking the description. I appreciate the thought that goes into flavoring your components. Reading a description allows me to “taste” each component and see how they interact. I love that you used yuzu, which is not very common in the west. It’s easy to prioritize structure and function over taste, but it’s clear that you’ve neglected neither aspect.
