I have spent the last six years traveling the world learning from different cultures and teaching high-level pastry skills, it was now time to do something great in the place I call home, Las Vegas. I want to put my life experience in the pastry industry to work for everyone else who would like to learn the fundamental and advanced skills of this beautiful craft with an intensive ten-week program covering all bases: pastry, plated dessert, chocolate, ice-cream, danish, bread, candy and chocolate showpieces. Chocolate Flamingo Float!
This life sized inflatable Flamingo is crafted out of 100% dark chocolate! It took 5 days of works and weighs 155lbs! I love the wrinkling effect and the valve!

I have been dreaming of the moment where I could craft the Eiffel Tower out of chocolate. What better opportunity do it then The Olympics 2024 in Paris! it took 5 days of hard work and 70lbs of dark chocolate to craft this 8ft tall sculpture! I love the way it turned out! what do you guys think?

This creation is the perfect late night snack for a night outdoor under the stars. Each matchstick is my take on a s'more ready to eat! It's composed of two crunchy vanilla sable cups, a milk chocolate caramel ganache, a milk chocolate spread. Chocolate Easter Basket!

This fully edible basket was crafted with 100% dark chocolate, it took a lot more skills than I thought and even more patience... In the basket I have decorated my classic egg dessert in the colors of Easter. They are composed of a mango compote and passion fruit cremeux center, a light coconut mousse and a thin white chocolate shell! The bow and the hay are made out of white chocolate!
Chocolate Pencil!

This delicious oversized and fully functional Pencil and Sharper took 3 long days of work and 65lbs of chocolate. The eraser part of the pencil is a 5lb raspberry marshmallow. As a kid I used to bite my pencil, this one definitely tastes better! Aside from the Marshmallow my favorite part is the Pencil Sharpener! Do you guys like this oversized sculptures of common objets?

Chocolate Paintbrush!

This 6"2ft tall 100% chocolate creation took 3 days and 90lbs of dark chocolate to build! The paintbrush angle was a real challenge to balance because of its weight and structure but looking at the final result it was completely worth the trouble! My favorite part is the paint bucket with the interactive handle! I love how small I look next to it! What should it do next?
