    • @kiltedcripple
      @kiltedcripple Před 2 lety +224

      For most people, I'd bet this much cutting is two hours. I love watching these videos, but I'm a very competent home chef and I disregard his time measurements every time. I know what I'm doing and I can't hit his time suggestions (or often budget either, but I digress) but especially when I look at my sisters in law who pretty average home cooks, it would take them an hour to drop three cans of Ro-Tel tomatoes and chiles with a block of Velveeta into their crock pots because they're not particularly organized. They also don't season food, I've spoiled them since marrying into the family, it's been nearly 2 decades and they're still asking me about garlic powder and how it's different from garlic salt. I make spice blends for the households at Christmas just so they can have one jar, measure out one fixed amount of spice, and make a pot of chili, for example. They all work, they're kids are still toddlers, they don't have time for this prep kitchen work, so when we visit, that's what I do, prep kitchen to set them up for future meals. I oil their cutting boards and wooden utensils, I sharpen all their kitchen knives, I clean their fridges, reorganize their Tupperware, etc, to make life when they go to use that stuff easier.

      Filming tacked on about 30 mins to this whole thing - we reset cameras and moved them around for each shot.
      Really full speed this can take 2 hrs 30. I think you’re selling yourself short! Cutting all veg took maybe 5-8 mins while filming.
      Even if I went slow (and I’m no means even close to a pro chef) it would probably take me 15 mins max. I wouldn’t tack on an extra hour or two to cut some vegetables :)

    Made the garlic parm knots today for practice, (hey, the teams practice too) they came out fantastic. I was a little concerned when I added the butter to the dough, it got really greasy (I just may have softened it a little bit too much), but the finished product was perfect. Only negative was that my "extra aged" parm wasn't hard enough to give me the fine grating I wanted. That must be the difference between made in Wisconsin vs Italy. Pretty confident now that tomorrow's knots will be raved about. (BTW, one error in the video - he mentions using unsalted butter for the garlic butter sauce, however the linked recipe says to use salted.)

    About new experience with a Molcajete:
    Sometimes, depending on the material the molcajete is made of, you might get too much of a "rock" taste.
    Well, you need to "seal" it. Just put some rice grains on it and smash them until change color to a "grayish" tone and try making some salsa. Repeat if needed.
    Bye.

Otherwise, if you go to the store looking for nice looking, tasting and soft enough avocados, you are going to be left with rock hard ones that you could never hope to mash. And.. you have to get the other ingredients, or you will be searching all over for those things that you can also never hope to find. Prep, prep, prep..... :) Sunday's coming up fast. Castelvetrano olives are THE superior olive. Went my whole life repeatedly trying and HATING olives. All olives. Didn’t matter what kind, how they were prepared, what they were cooked on/in. Until I tried one of those bad boys. Game=changed. If you hate olives, but haven’t tried castelvetranos, try them. You may be pleasantly surprised. I eat them all the time now.

      The flavor is salty, fatty, and nutty. Not overly briny, or bitter, or sour. Very mild compared the most olives that have a funky almost formaldehyde, distinctly olive taste. No funkiness. They’re so much more pleasant than any other olives I’ve tried.

Whatever was made tasted good, but he definitely overstated the easiness of this spread.
