500g (1.1lbs) - Penne or Ziti (Updated)
1 Tbsp (20ml) - Olive Oil
500g (1.1lbs) - Beef Mince (Ground Beef)
250g (8.8oz) - Pork Mince (Ground Pork)
1 - Brown (Yellow) Onion, Grated
1 - Large Carrot, Grated
4 - Garlic Cloves, Minced
1kg (2.2lbs or 2 1/2 Tins) - Diced Tomatoes
2 1/2 Tbsp (8g) - Dried Italian Herb Mix
60g (2.1oz) - Parmigiano Reggiano - Plus More For Serving & Filling
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
10g (0.3oz) - Basil, Roughly Chopped
Mozzarella Cheese For Filling

We had this tonight it was really good, it is now on the cook again list. Next time I will add some chilli to this as well, I really liked the addition of fresh herbs. I just love the techniques you introduce (I never grated onion before).
I would serve a moderate portion with a salad personally. This does make a large amount of food, so you could serve a family of four on a Sunday AND then have leftovers for lunches during the week.

Much easier if you can do it, to tip the sauce on top of the pasta instead. Much cleaner and easier to mix the two together.
That does create more dishes but would be easier, especially if you had a large bowl 😊😊

Penne Pasta is one of my favorites, and I do make very similar to yours, but love how you've stepped it up. I see how you are getting adjusted to the new environment and making adjustments. One personal point. Music is good, but the intro music I found too loud and distracting. The end was better, but still on the loud side.
