  • Penang Char Kuey Teow was numerously requested. Here is a simple Char Kuey Teow recipe with tips to make a perfect plate of Char Kuey Teow with the taste of slightly charred noodles.

    In almost every video, I get requests asking me to whip up “Char Kuey Teow”. Secretly, I have been attempting this dish quite a few times. I was asking myself how difficult could it be when it is all about stir-frying some rice noodles with a few other ingredients. That was exactly where I was wrong as I found out it could be quite tricky.
    Let’s just say that the pronunciation of Char Kuey Teow is already a little tricky for non-Cantonese speakers. Just click the video above if you want to hear how it is pronounced exactly.
    Preparing a plate of Char Kuey Teow just like in Malaysia not only requires the right ingredients but also the correct techniques. I found that it is better prepared in small amount: 1 plate at a time, unless you have a big wok to work with or you are a true professional. The noodles would turn soggy if too much sauce is poured all at once.
    To fry Char Kuey Teow, the noodles have to be cooked at high heat. That is why you need to be fast at stirring the noodles or else they might be burnt. A slightly charred taste is all we need for these noodles to have the smoky taste and flavour for which they are famous for.
    You may add chopped preserved vegetables, blood cockles or even fry the noodles using pork lard. You can enjoy it with some raw sambal belacan and a bit of lime or calamansi juice. Whichever way you like it, a plate of Char Kuey Teow brings the taste of home to every Malaysian.

    I’m a Singaporean living overseas and my all time favourite comfort food is Char Kuay Teow. My ideal type of CKT is one with lots and lots of blood cockles and an extra egg.       never EVER order CKT from Chinese shops or shops that advertise to be "ASIAN". Non-Malaysians just don't know how to make proper CKT

      Me too. Though I hate to admit it but the best I had was when I was living at the Westin Stanford in Singapore. Everyday I ordered from service for this dish with green pepper slices.

    I spent several months in Penang over many trips. I enjoyed every meal I had at the hawker centres. Fantastic food! Char Kway Teow is definitely one of my favorites. I remember going to the market with the mother of my good friend, Kheng Lip. Mrs. Lee is a dynamo. She would come armed with pots, leave one pot at one vendor with specific instructions (I'm assuming). Then go to another vendor.... Let me tell you... The food was actually crawling off the heap! Quite an experience! Anyway, Great show, thank you!

    Grace, I am from Taiping, CKT was always my favorite hawker food. In my time a plate at the Casual Market cost only 30 sen WITH cockles. Now Cockles cost an arm and leg. A plate can set yo back RM 7 to 8.00. I have since several years back, learnt to fry CKT and I must say, it taste even better that some stalls. Thanks for the memories

    Fantastic!!! A scorching hot wok and fast hands, now that's real East Asian cooking !!! I usually order this or chicken rice at Malay restaurants . I made this for myself and my dad following this video the other day and I have to say...it comes close to about 80% of the taste in the restaurant. Although I substituted the kuey teow with chow fun that I got from a friend (I cut it to small square pieces) and I used Chinese cabbage instead of bean sprouts. Thank you !!!

    Thanks!! Now I know where I was going wrong, I was making Thai "Kii Mao Gai", but I could not get that texture right, that's because I was adding 1KG of noodles!!!     Always love ur video, always clear very well done. Hmmmm.. I used to help a friend father at his stall I think almost 20yrs ago.. Ur recipe is pretty much close in fact. But of cos my is like a Singapore version haha... Yep! U didn't miss out fish sauce in fact!!! N for pepper for as long as I know the pepper belongs to as wat they call the teochew cha, they sprinkle the pepper after its done. Oh yes need a little water while cooking juz to smoothen the noodles... Locally here they mix the rice noodle n yellow noddles.. 😊 prawn n fish cake can be added in when almost half done as prawn is easy to get cook. As for fish cake actually it will be stir fried with a little fish sauce juz for preparation. Cockles will be the last after the sweet dark sauce has stir in the noodles.. Oh yes no sugar as it will turn bitter when it's burn (u will add in the sweet dark sauce n tats sweet 😃). Cockles last as the noodles is hot.. U let it cook slightly by the heat from noodles 😅 Happy cooking!!

    I followed this recipe down to a tee and result was perfectly charred kway teow. I used hor fun which I think is essentially the same as flat rice noodle. Tried second time round with left over ingredients I tried recipe with egg noodles instead. Result was more mamak mee but delicious nonetheless.

    I've had this dish since i was little (Macau, HK, and U.S.), and it's always cooked with curry powder. So basically this is like a thick-noodle version of Singapore fried noodles. I think 老抽 is good to add color to a dish too. It's less sweet and has the same consistency as light soy sauce.

    Looks good! I love char kway teow, especially when visiting Singapore, which includes the blood cockles. Lor 9 Geylang Famous Beef Kway Teow, in Singapore’s red light district, was particularly good, with nice wok hei. Unfortunately, I have trouble with the flat rice noodles breaking up during the cooking, which makes it look less appealing, though the outdoor high-pressure propane burner I now use and a well-seasoned wok lets me achieve hawker stall-level wok hei.

    I read some comments about char kway Teow in Singapore below. Yes, Char Kway Teow is just as popular in Singapore as in Malaysia. Top Char Kway Teow Hawkers are well sought after in City State. Just Google "TOP 5 Char Kway Teow in Singapore" and you will find them. They cost as little as SGD 3 (US$2) a plate.
    And for blood cockles, you just need to go to Google, select "Images" and type "blood cockles" and you find lots of pictures. A word of caution -as with many shellfish, they can cause hepatitis A if not well cooked. Ask for them to be well cooked or get a hep A immunity jab.

    Impressed by the inclusion of fish sauce into the sauce mixture but the wok needs pork cracklings and fat. That's why the CKT looks a bit dry.

    This looks even better than the some of the ones sold at my local vendors. This looks great but however I'm very firm on having pork lard in char kuey teow. Health concerns aside to me it is what makes charkueyteow so delicious!

    Hi, I have been following your receipes recently. I made the curry chicken and char kway teow last night. had a lot of compliments from the family, especially the char kway teow. Please continue to share recipes. I'm from Singapore by the way so this dish is so relatable :D By the way, could you come up with fried carrot cake recipes.

    Quite unusual to add chili paste in the char kuay teow, but it looks good.

    Worst food poisoning experience of my life was from seafood char kway teow in Penang. Guess what I had the first day of recovery? Char Freaking Kway Teow. Yes it is that delicious.

    Grace, I think I had something like this when I went to Malaysia but the name is different it's called Singapore noodles. Thanks for the recipe I will make this for sure, I like recipes that you can tweak to your own preference.

      I think SGP noodles is completely different from this.. The noodles are thinner and it has a hint of curry flavor to it

      +"prettycraftygirl" This dish is the Malaysia classic, very different from Singapore noodle, the ingredients, spices and noodle choices are different, but they are same fried and need the 'char' flavour
