  • Buttermilk is simply fermented milk used in many non low carb baked goods. It’s purpose is to help with rise and to balance out the sweetness of the recipe. Such as: biscuits, pancakes, waffles, and muffins. It is a bit thicker than milk and has an acidic tangy taste. Buttermilk has a subtle tang that is similar to plain yogurt, so what better way to mimic the original taste than to use active bacterial cultures from Greek yogurt? This keto version includes white vinegar, but the amount is minimal. If you compare regular buttermilk to this low carb keto version side by side, the taste is similar but subtle. Use this keto buttermilk for recipes that calls for buttermilk, minus the carbs.

    Since on keto we can use whipping cream , I put a tsp of vinegar in that and I have buttermilk. I’m carnivore so I use whole goat or cows milk whipping cream and add vinegar to that and have nice thick delicious buttermilk.

      Amy, please let me know if it works using my keto yogurt recipe. I ate all my keto yogurt, so didn’t have any on hand when I thought of this. I haven’t had time to make a new batch. I’m eager to know!

    I have an instant pot that I've never used. Looking forward to getting it out and making this so I can use it in some of my recipes. Especially want to try to make a faux cornbread, the texture of almond and coconut flour should work well and the buttermilk would give it the needed flavor.

    This recipe looks super easy to execute and I already have all of the ingredients at home. I'm finally getting back into the kitchen after a long time away, and I can't wait to give it a try. I'm going to use it for pancakes first. Maybe I'll try biscuits next.

    • @KetoAsianFlavours
      @KetoAsianFlavours  Před rokem +1

      Do you have a slow cooker? That might work on warm. You can also use an oven with the light on. Maybe a toaster oven with the warm function? For the oven, you might need to ferment longer. I haven’t tried it yet. I’m actually thinking of getting a 2nd InstantPot exclusively for this 😆

      It’s actually not! I run out and have to make a batch every week. You can just divide the recipe in half.
