I like it! I think I’ll try this. I’ll just use vanilla extract though. Thanks for the recipe 👍

How much pandan extract? I have Butterfly Gunacipta brand, which is extra strong, I guess? My first time cooking with it and I'm so excited!

Do you think you could make us a video on how to make keto pastry cream without using xanthan gum?

You can actually use this recipe without the flavouring and gums. Just cook it for longer until desired consistency.

Looks more like a thick sauce than custard.

Custard consistency can vary. It can be a thin pouring sauce (creme anglaise) to a thicker consistency such as a blancmange (English style). Custard is prepared with a base that consists of dairy, egg or egg yolks, and sometimes gelatin or even cheese. Non keto recipes normally calls for flour or corn starch. This is an Asian style pandan custard used to spread on (keto) toasts. Some custards are also baked using a water bath resulting in a different consistency. In the video, at 1:23 I had mentioned to cook the custard longer if you desire a thicker consistency. Shown is a custard that is still hot off the pan, so the consistency is not as thick. I also mentioned that chilling in the fridge will thicken it a lot more. If you thicken it too much, it will be too thick (for me) after it has been chilled.
