Wow look at how fluffy these are! Once again this channel has taught me to think outside the box, by showing that you can use a different ingredient or technique on something familiar to create a fun "riff" on it. Corn tortillas are so good, so is cornbread so i'm imagining how a pancake version would be

What a great recipe. I make my own strawberry sauce and jelly, but I add date paste in place of sugar. Easy to make and so good and healthy. I hope you will try it.
BUTTER and very warm pure maple syrup is our go to with "pancakes" or french toast. This strawberry topping looks really good too...
My wife and I will definitely make these pancakes! I like very little butter on my pancakes (I actually think I could eat them plain, sort of like cake) and my wife likes lots of butter. Thank you for another great recipe!

We have White Corn here that is still the same variety before European contact.
Can different fruits be used in place of the strawberries? I would prefer to use blueberries.
Masienda corn flour would add some color.
I can not find unflavored protein powder. Can I substitute vanilla shake protein powder?
Sure, but you may have to adjust the sugar if the protein already has some. You can find the link to the protein powder I use in the description area.
