Grilled Swordfish

- Here's a healthy, and easy way to prepare fresh swordfish steaks. The key to cooking
swordfish is not to over season it or overcook it. I find that asparagus is a perfect
side for this meal, but obviously you can have whatever vegetable you like.
Ingredients
2 6 oz. fresh swordfish steaks
fresh asparagus
citrus ginger rub
Italian seasoning
himalayan sea salt
ground black pepper
olive oil
Step 1
Wash the asparagus, cut an inch or so off the stems. Them steam
the asparagus for about 7 minutes.
Step 2
Sprinkle some of the citrus ginger rub on the cutting board, begin
coating the swordfish including the edges.
Step 3
Drizzle both sides of the swordfish with the olive oil.
Step 4
Add 1 tbsp of Italian seasoning, 1/2 tsp sea salt, 1/2 tsp pepper.
Immediately after removing the asparagus from the steamer, drizzle
with a little olive oil, then generously sprinkle with the seasoning mix.
( The reason for doing this immediately after steaming is that the
seasoning with stick to the asparagus better, and absorb more flavor.)
Step 5
Preheat the griddle over medium/high heat, add the swordfish, cook for
about 2 minutes per side. Then sear the edges about another minute or 2.
Step 6
Drizzle both sides of the swordfish with the olive oil, this will help to keep
it from drying out. Serve with the asparagus, or vegetable of your choice.
