Dark Chocolate Pie with Meringue

  • This is a very rich and delicious dark chocolate pie with meringue. I didn't show how to make the meringue because it's already featured in my Old-Fashioned Banana Pudding video. I'll include the link below, if you'd like to see how it's made. The complete recipe is in the description below as well as the ingredients list to this pie. I hope you'll try this recipe.     Dark Chocolate Pie:
    1 baked pie shell (you can use frozen or your favorite homemade recipe)
    1 1/4 cups sugar
    1/4 cups cornstarch
    1/4 tsp salt
    3 cups whole milk
    4 eggs, separated
    4-ounce package unsweetened bakers chocolate, chopped
    3 tablespoons butter
    1 1/2 tsp vanilla extract

    No-Weep Meringue:
    1/2 cup water
    1 Tbsp cornstarch
    2 Tbsp sugar
    3 egg whites (room temperature)
    1/4 tsp cream of tartar
    6 Tbsp sugar
    1 tsp vanilla extract
    Directions: heat water, cornstarch and 2 Tbsp sugar until clear and thickened and set aside to cool. Beat egg whites until frothy. Add cornstarch mixture a little at a time. While mixing, add 6 Tbsp sugar, 1 Tbsp at a time. When soft peaks form, add vanilla and beat until thoroughly mixed and mixture is light, fluffy and creamy. Spread on pudding or pies and bake at 350 degrees for 20 to 30 minutes or until golden.

    I’ll bet you could also turn this into an icebox pie if you used whipping cream instead of meringue.
