  • Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in)
    1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml
    120g dark chocolate (1 cup)
    30g unsalted butter (2 tbsp)
    30ml milk (2 tbsp)
    4 egg whites
    a pinch of salt
    50g sugar (4 tbsp)
    4 egg yolks
    1 tsp vanilla extract (5ml)
    Bake at 170C for about 20 minutes
    Chocolate Cream Filling
    150g dak chocolate (1 cup + 2 tbsp chopped chocolate)
    90g heavy cream (1/3 cup)
    300g cold heavy cream (1 1/4 cup)
    30g sugar (2.5 tbsp)
    Cocoa Syrup
    75ml hot water (1/3 cup)
    1 tbsp cocoa powder (7g)
    2 tbsp sugar (25g)
    Mix to dissolve and let it cool down completely
    Chocolate Glaze
    50g cocoa powder (1/2 cup)
    115g sugar (1/2 cup + 1 tbsp)
    85ml water (1/3 cup)
    85g heavy cream (1/3 cup)
    1 tbsp gelatine powder (9g)
    3 tbsp cold water to bloom gelatine (45ml)

    I wrote down the whole recipe with instructions. Feel free to use it:
    Flourless Chocolate Cake

(pan size 38 x 26 cm or 15 x 10 in)
    1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml


    Cocoa Syrup:

    75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g)
    2 tbsp sugar (25g)
    > Mix to dissolve and let it cool down completely
    

Flourless Cake:

    120g dark chocolate (1 cup)
    30g unsalted butter (2 tbsp)
    
> Melt over 70°- 80°C hot water
    > Add 30ml milk (2 tbsp) and stir
    4 egg whites
    a pinch of salt
    > Whip

    > Add 50g sugar (4 tbsp) gradually

    4 egg yolks
    1 tsp vanilla extract (5ml)
    > Whip then fold into the chocolate mixture

> Fold 1/3 of the egg white mixture into the chocolate mixture, then fold the chocolate mixture into the rest of the egg whites mixture

    > Line a pan with baking sheet and spread out the dough
    
> Bake at 170°C for about 20 minutes, let it cool down

    Chocolate Cream Filling:

    150g dark chocolate (1 cup + 2 tbsp chopped chocolate)

    90g heavy cream (1/3 cup)

    > Melt over hot water

    300g cold heavy cream (1 1/4 cup)

    30g sugar (2.5 tbsp)
    
> Whip
    

> Add 1/3 of whipped cream to the chocolate, then add everything to the whipped cream


    > Trim the edges of the cake, cut into 3 pieces
    
> Apply cocoa sirup

    > Pipe the chocolate cream and flat it out (3 layers)
    
> Let it cool in the fridge for 3 hours

    Chocolate Glaze:
    

1 tbsp gelatine powder (9g)
    > Add 3 tbsp cold water (45ml) to bloom gelatine
    
50g cocoa powder (1/2 cup)

    115g sugar (1/2 cup + 1 tbsp)

    > Add into saucepan and mix
    85ml water (1/3 cup)
    85g heavy cream (1/3 cup)

    > Add to the saucepan, mix and boil, let it cool down for a few minutes
    > Add bloomed gelatine and stir
    
> Sift it through a fine mesh strainer

    > Let it cool for 1,5 - 2 hours

    > Sift it through a fine mesh strainer again, stir really carefully
    


> Trim the edges of the cake
    
> Pour the chocolate glaze

    > Cut into 7 slices
    
> Optional: Decorate with edible gold

    I just made this cake and dropped some slices off my friends and the amount of complements I got from this cake was astronomical!! “It’s the best cake I’ve ever had”, “taste like an authentic restaurant chocolate mousse cake”, “very impressed”, “it just melts in the mouth”
    The directions were very easy to follow and it turned out lovely. Keep in mind this cake definitely takes awhile to make, but it’s 100% worth it! However, the cake is quite small and we had a lot of extra frosting, so I definitely recommend making two cakes at a time (more for you)!
    Overall: 10/10, one to be written down in the recipe books!

      I'm having trouble with the cake mix with the white and yolk, it goes thin and funny. It cold fine, I think a bit thinner though then in the video. How about yours?

      Just a question... about the glaze... did it turn out shiny like a mirror? and stay that way after refrigeration? because this seems like an interesting/useful take on a glaze.

      @@presleyviegas1171 it does get nice and shiny, its brown so I would say not like a mirror. but before you pour it, if it gets too cold it gets pretty firm, microwaving in 10 sec intervals softens it back up, just be careful on the stirring to not create bubbles

    Been a chef for 37 years, never seen a cake recipe such as this, will be making this with my daughters this coming weekend. I'll say this, the pandemic has allowed my daughters and I to cook more than in the past. I just published a cookbook "Cooking with the Girls".     I tried this recipe and I was intimidated by the folding parts. I took it slowly and it ended up coming out so nicely. The cake is so delicious and really worth trying! Thanks for the recipe!

      I'm thinking of making this, do you think it needs something to bind it, for instance almond flour? Is it dense?

      ​@@danielleedmondson3347 I don't think it needed any flour at all. It seems to be better if you can really whip the egg and other ingredients well before folding them together. It firms up slightly in the fridge too after you assemble the layers of cake. Its rich, chocolate flavour works really well with its more delicate texture, compared to regular cakes, in my opinion. I did a test run before making it for a holiday dinner and it turned out really nicely as a first attempt. Happy baking! :)

      For me I didn't realize how sensitive you had to be when melting the chocolate and whipping the egg whites into peaks. You risk the chocolate burning/seizing and the egg whites not forming peaks if any eggs yolks or leftover grease residue gets in. Great recipe though, I learned alot!

    I made this cake, and it tasted SUPER GOOD! Part of the cake actually broke off during the process, but the chocolate cream filling glued everything together & nobody could tell. Next time, I would do two recipes at once since our family of 5 seemed to devour this so quickly.

    I made this cake, which took me 5 hours!! but it was definitely worth it as it's absolutely delicious and, believe it or not, not too sweet! I must say that I'm a beginner on cakes and on cooking all together so I have no experience at all, but everything worked out as it says on the video and although it was very time consuming, I had no problems with anything, just follow the instructions. I just came across this channel so, I'll be looking up more of her recipes. Go for it and good luck!

      @@Kiwi403 No, you just bake 1 cake and cut it into 3 equal rectangles before stacking it on layers, just like it show in the video.

      @@allmight5008 I'm not a professional baker but I'm certain it'd be impossible to compete with the incredibly cheap options out there, although I find all cakes in shops pretty awful and overly sweet, bad quality too. I think that if you're a more experienced baker, and if you make quantities for 5 cakes at the time, it would probably take you more or less the same amount of time. If you have a good reputation on your cakes and can charge the right price, it may well be profitable... you have to do your numbers and actually make the cake to know. I just made it for myself and friends and everybody loved it. It's easy to make and it ends up looking exactly as in the video, very professional looking and tasting too!

    Beautiful! Such an art! For those watching, if you smoothly frost down the sides after trimming, like the top was, you can get that glaze to look smooth all the way around. Also, you can crumble up the trimmed off pieces and make cake pops dipped in chocolate! Extra goodies!

      @@fatimaramzan4069 No, you cannot substitute a liquid (melted chocolate) for a powder. You will end up with some sort of chocolate meringue instead of a cake batter. The chocolate bars have cocoa butter and milk fats in them that change the structure of the composition.

    Oh my gosh! That was a pleasure to watch. It was soothing and almost meditative. I don't know if I will ever get around to making this cake (although I have saved the recipe for later), but I really enjoyed watching this video.

    Tried making this cake and gosh it was delicious! Took me almost half a day but it really tasted like it came out of a shop - sort of reminded me of those pastry shop’s signature chocolate cakes. This recipe is definitely a keeper, the steps are straightforward & not complicated!

      Hey there. Since you've tried this cake. Could you please let me know as to how much chocolate I need to add to the yolks. ( This isn't mentioned ) although the amount of egg white to be added to the rest of the chocolate is mentioned

    I tried at home and it was amazing this recipe is just the best I ever have followed till today .The cake was just PERFECT!the taste was amazing I did it with a strawberry and raspberry cream to not get bored of chocolate. So I followed your video to make the same cake but with strawberries to prepare the cream .

    Love the look and texture of this cake. I actually tried making the flourless chocolate cake as stated in this video, but I ended up adding about 3 handfuls of ground almond flour and it was just decadent 😍 The cake turned out very moist and tender. So good it didn’t even need the chocolate mouse to go with it. But next time, I’ll try the chocolate filling for sure. Thanks for sharing and inspiring us

    I made it, it turned out GREAT! I wanted to surprise my mom for Woman's day because she is allergic to gluten and she likes it too much!🤗 Thanks! 😍❤️
    Update: Some ingredient bothered her, I don't know exactly which one, maybe vanilla extract or heavy cream ... Or simply its ingredients are not the same as mine I bought in Serbia 🤷 But I ate it and it was beautiful! I will definitely do it again ☺️

    I made this yesterday for my husband who is a chocolate lover. This cake turned out amazing. I shared with some friends and everyone who tried was very quiet for the first couple of bites. This cake is that good. Super chocolatey but not too sweet. I will definitely make this again!❤️❤️❤️

    I did this cake twice and tried it once with more chocolate by addition of 20g and another time with 1 extra egg. The extra egg seems to make the cake more softer and it can be eaten immediately after taking out from the fridge, whereas the one with more chocolate is harder and will need to take awhile to consume due to it being hard. It taste fabulous and chocolatey and absolutely out of this world. 😍
    For those staying in a much more humid country, you will need to do it in the evening. The chocolate will melt quite fast! 😅

    i made this. but onstead of the egg cake, i used a dark chocolate cake mix. and instead of the thing she pours, i poured ganache. and the chocolate cream, i followed her recipe. it was hella good.
