Easy and Delicious Mexican Cheese Soup

- This Mexican Cheese Soup is so easy to make and so delicious! You can easily make this on a busy weeknight and it would be great to serve on a cold night. I've listed the ingredients below, as well as a link to my Texas Sheet Cake video that I'm making for the church dinner this weekend. Mexican Cheese Soup (serves 4 to 6, depending on serving size)
1 pound ground beef, chicken, or turkey
1 large onion, chopped fine
1 pound Velveeta cheese, cut up into cubes
1 15-ounce can whole kernel corn (I used a bag of frozen corn)
1 15-ounce can black beans
1 10-ounce can Rotel tomatoes
1 14.5-ounce can diced tomatoes
1 package taco seasoning
2 cups beef broth

Oh my gosh, I haven’t thought of Velveeta cheese in decades and it made me chuckle when you brought it out for the soup. In the 70s my younger brother was crazy for that cheese and the rest of the family did not like it but my dear mom always kept some on hand for my brother. Adorable new baby in your family. Velveeta has been around for decades. My mom used to make mac & cheese with it when I was a kid. I must admit, it does great in most recipes. My husband likes to use it for grilled cheese. Thanks for checking the picture out of my new great grandson. I'm sad that I won't get to meet him until later in the spring or summer. We live 900 miles apart. Thanks for stopping by!
Hello Elaine! Congratulations!! What a sweet looking great grandson! We still have 18 inches of snow on the ground w more in the forecast this week, so soup is still making a regular appearance on our menu. You're right about the soup, I saw the sign-up sheet and there's going to be a lot of chili, potato soup, chicken, broccoli cheese, etc. I wanted to make something a little different, so I chose this one.
