6 eggs scrambled with a little milk
Roasted Portabella mushrooms sliced into strips(the seasoning i used on the mushrooms was JD's bacon salt ,pepper, pinch of chill powder, onion powder, garlic powder, ground fennel-all to your taste)!
Roasted red bell pepper strips
4 slices American cheese
Fresh spinach leaves
optional: you can use any fried breakfast meat too if you like instead of mushrooms, like sausage or bacon or ham.

Best egg advice came from Alton brown on good eats! When they are still wet move them off heat and they will finish cooking and be perfect! He’s right... best eggs ever I don’t like dry eggs 👎🏽
Lara Jopling if you don’t, your basically frying the egg, not scrambling it. Low low heat, keep stirring. Make in a pot, not a frying pan.
