Banana Bites & Bacon Dippers January 4, 2023

- 2 1/2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon of salt
2 cups milk
2 large eggs
4 tablespoons butter, melted
2 teaspoons vanilla extract
2 bananas, sliced into into 1/2″ slices
10 slices or precooked bacon
sliced pats of butter, and some oil for skillet
Whisk flour, sugar, baking powder, and the salt in a large bowl.
Stir in milk, eggs, melted butter, and vanilla extract until combined well.
Heat a large skillet (or use griddle) over medium heat with a pat of butter and some oil.
Dip each banana slices in batter and allow excess to drip off a-little.
Place covered banana slices in skillet, and cook.
When edges look dry, and bubbles start to appear and pop on the top surfaces of the pancake, turn over.
This takes about 1 to 2 minutes. Once flipped, cook another 1 to 2 minutes or until lightly browned and cooked in the middle.
Repeat with all banana slices.
You will do the same with your bacon slices.
Serve banana slices and bacon dippers with maple syrup, or dust with powdered sugar.

I would take those banana dippers and top them with strawberries, pineapple, chocolate syrup, whipped cream and nuts for a banana split breakfast. Love Sara and her videos! She brings out creativity.

I grew up on PB&J, tuna salad, sardines with sliced onion on saltines, bologna and mayo sandwiches, fried bologna for dinner, fried chicken, Breakfast for dinner, potato/macaroni salads, Hamburger Helper, etc. . . I like your take on making these things new.😋

My favorite is a waffle topped with bananas, walnuts, whipped cream and a bit of syrup. I've NEVER thought to make pancakes with slices in the batter! Going to try it ASAP!
