Hey! I don’t understand the math. When I did 655 x .25% I got 1.64. What am I missing?
How did you get 1.75 as your answer?
@@oliviertalisman3722 hi Oliver, you’re absolutely right. My bad, when I made the recipe I rounded up the numbers and forgot i had when I did the voice over. What’s important to remember is the ratio of pectinex to juice to clarify is between 0.2% up to 3% so adding that extra 0.11 gr will only help slightly more the clarification. Sorry for the confusion

Hey Paul, problem with the juice with apple is it will oxydize very fast. 30 minutes later the juice would have turned totally brown. Cordial will last up to 4 weeks in the fridge

make a series of cocktail that can be made in big batches so we can store them in a bottle and serve it when ever we want over ice. it would be amazing for everyone to have a ready to go cocktail at home
Hey Stefanos, thanks for the input. I'll keep that in mind. That said, all the clarified cocktails I made on the channel can be scale up for batched cocktails because milk clarified cocktails are shelf stable. ;)
What's the mixing glass that you use (e.g. at the 3:30 mark)? The one you link in your description has straight sides but your video shows one with more of a pear shape.

Depends on the level of pectine in the juice but usually max 30 minutes

Is pectinex .25% by weight the correct amount for any kind of juices or is that proportion specifically for apple?
Hey Norm! It is not the same for everything. Some ingredients like pineapple are harder to clarify and I use a little more but roughly this is a good starting point. If you don't get a good result, you can add just a little more and see. When you use pectine enzyme, you will notice that the juice will "break" before you filter it. If you don't see that happening at least a little after 30 minutes, Add a bit more, shake again and wait another 30 minutes. Repeat until you are confident. I hope this helps.

Can I use pectin powder as a substitute for pectin x?
No. Pectine X is actually an ezyme breaking down the Pectin molecule in order to clarify the liquid. So Pectin powder would just make the liquid cloudier.

At first, when I clarified the apple juice, the result was so similar to commercial apple juice we buy, I couldn't justify to simply use that in a drink. It was too much effort for something that looked and tasted almost exactly like the store bought stuff. Not to mention that I would probably have to add acidity so I would probably ruin the clear factor if I was to use lime of lemon. So I decided to add more flavours to it by mixing it with sugar snap peas and then, transform that tasy fruity green juice into a cordial with powdered acid to keep the clear aspect.

You don't want pectin, you want pectinex. Pectinex is the brand name for pectinase, which is an enzyme that dissolves pectin.

I have made a new ingredient, pine sirup. Its made by boiling pine shoots of 30 min, straining out the shoots, and then adding 2 parts sugar to 3 parts of the liquid and boiling for another 30-40 min. It makes a deep pink/red sirup with a slightly acidic, tangy taste.
I was hoping you could help me make a cocktail recipe using this (challenge accepted?). I live in Norway and a locally made spirit is Aquavit, maybe that could be used as the base spirit?
