  • Did you ever wonder how to clarify lemon juice to make clarified cocktails? I made clarified Penicillin and Aviation cocktails with lemon juice that I clarified with agar (or agar agar). These were made as a pair of cocktails perfect for Valentine's Day, but you can use these recipes any day of the year!
    Milk clarification is great, but it will change the texture of the cocktail so give this method a try. Find the recipes below.

    ● Pectin: amzn.to/3pJHOeG

    Clarified Lemon Juice:
    • 300 ml (10 oz) Freshly squeezed lemon juice
    • 0,6 g Agar Agar
    Add Agar Agar to ¼ of the lemon juice (75 ml or 2,5 oz) in a small saucepan and bring to a slow simmer, whisking constantly. Once the Agar dissolves completely, turn down the heat and slowly whisk in the rest of the lemon juice. Place the saucepan in a freezer or ice bath for 1-2 hours to form a soft gel. Then strain it through a filter and a cheesecloth. Bottle the clarified lemon juice and keep it in the fridge. Use within two days for the best results.
    Beetroot paint:
    • 100 ml (3.33 oz) Beetroot juice
    • 1,8 g pectin
    Heat up the beetroot juice until it starts to simmer then pour it into a blender and add pectin. Blend for 30 seconds, strain through a cheesecloth, and place it in the fridge in a small sealed jar for at least 2 hours. Shake up before applying the brush to the inside of the frozen glass.
    Ms. :
    • 45 ml (1.5 oz) Monkey 47 gin
    • 22,5 ml (0.75 oz) Maraschino liqueur
    • 22,5 ml (0.75 oz) clarified lemon juice
    • 2 barspoons violet liqueur
    Throw or stir the cocktail, then serve it in a chilled glass and garnish with a pansy flower.
    Mr. :
    • 45 ml (1.5 oz) Chivas Extra Regal 13
    • 15 ml (0.5 oz) D.O.M. Benedictine
    • 15 ml (0.5 oz) clarified lemon juice
    • 1 barspoon simple syrup
    • 1 barspoon Peated Malt Whisky (float)
    Add all ingredients except the peated whiskey and throw or stir the cocktail, then serve it in a chilled rocks glass with beetroot paint inside the glass and a single large ice cube. Float a barspoon of peated malt whisky on top.
    Enjoy responsibly!

    Hi Kevin, I'm currently stumped. My bar is taking part in a cocktail competition and I wanted to create a tweak on your clarified basil smash cocktail and for the garnish I wanted to create a paint just like the one you made with beetroot but instead a green one, preferrably made with basil
    Is it possible to create a green basil-tasting paint that would also stick to the glass and not melt instantly as you pour the cocktail into the glass?

    They both look fantastic, and I will have to try them. Though I would be a little disappointed if the MR was called a penicillin as I love teh spicy ginger byte, might try it with ginger liqueur as teh barspoon of sweetener balance to give a hint.

    • @KevinKos
      @KevinKos  Před 3 lety +1

      That would be a great addition, but I didn't add it, because it already has a ton of notes and it could cover the subtle earthy taste from the beetroot paint. I just replace the kick from ginger with herbal notes from Benedictine. Maybe I should call it different, maybe more suitable to the current events? 😀 I would be happy to hear your opinion of the cocktail with or without the addition of ginger. Thank you!

    Hi, I tried to clarify lime juice following your method and both times I could not yield clear clarified juice. I even tried a 3rd time following other method of using 1/4 water instead of lime juice to hydrate the agar like you did and the result is still the same. I let the combined juice and agar set in ice bath and in fridge for 2 hours and filtered through 4 layers of cheesecloth. Any help you can offer would be greatly appreciated!

    Fascinating. What I heard is this is done for aesthetic reasons not to change lemon flavor. Use same quantity in a drink just like raw lemon juice? Can this be frozen to keep it longer or how long will it keep unfrozen in a fridge? Would be cool if you could freeze in a cube say 3/4 Oz or 1oz put the cubes in an airtight container and then pull out what you need. Would that be possible? Thanks for your masterful efforts!! Ok. You said it could be frozen. I’m gonna try and find cubes the right size.

    • @KevinKos
      @KevinKos  Před 2 lety

      Dave Arnold (author of Liquid Intelligence) says that the clarification doesn't expand the life of the juice, but I just might don't fully agree with this one. To my experience, the clarified lemon juice stays good for up to two days, but if you will prebatch some cocktail it's good for even longer. With adding alcohol and sugar you are ok for 3-4 days. I would love to hear your results. Thank you and cheers!

    How much loss can be expected when clarifying citrus juice with agar (agar)? Seems like the cheese cloth has a good bit of gunk left over but then your bottles looks like it has a solid 8-10 oz of liquid in it.

    • @KevinKos
      @KevinKos  Před 3 lety +1

      The loss is small. Make sure that the cheesecloth is moistened with water before you will start filtering and the only thing left in the filter will be some citrus pulps. I think that there is around 20-30% loss but I haven't measured before and after clarifying. I will have this in my mind with the next batch of clarified citrus juice. Cheers!
