  • Bake at 350 Deg. F for 30 - 45 mins
    For the dough-
    4 1/2 cups bread flour OR all purpose Flour
    5 tbsp. unsalted butter
    1 tbsp. and 1 tsp yeast
    2 1/2 tsp wheat gluten - available in my amazon store
    1/4 cup water
    3/4 cup whole milk / stayfresh / full cream
    2 small eggs
    1/4 cup sugar
    1 tsp baking powder
    1 tsp salt
    -----------------------------------
    For the filling-
    4 cups finely shredded coconut
    3/4 cup sugar
    3/4 cup water
    1 tsp cinnamon
    1/2 tsp nutmeg
    2 tsp vanilla essence / extract
    red / pink food colouring
    ---------------------------------
    for the glaze-
    1/4 cup water
    1/4 cu sugar

    In a pot coconut, water, sugar, cinnamon, nutmeg and essence. Put on medium heat and allow to cook. Once thickens and water dries add food colouring. Set aside to cool
    Flour, baking powder, wheat gluten (optional), salt. Mix evenly and set aside.
    Lukewarm water, sugar and dry active yeast (instant yeast). Mix. Set aside to bloom.
    Melted butter or room temperature butter, sugar, cream butter and sugar. Add eggs (1 large or 2 small). Pour in yeast mixture. Mix it in. Then pour in milk. Yellow food colouring optional.
    Add flour to the wet ingredients. Add a little at a time and mix it in. Once dough starts to pull continue kneading until it is very smooth.
    Let it rest for 5 mins before rolling it out.
    Sprinkle surface with flour. Roll out dough to ½ inch thickness. Transfer to a baking tray. Take filling and fill half of the dough. Bring the other half of the dough over. Take a knife or a cookie cutter and cut the fingers. Cover with a light tea towel and allow them to sit and rest for 15 mins they will double in size. Put in oven to bake at 350 f for 20 - 30 mins.
    Cool fingers. Make sugar syrup with water and granulated sugar. Allow to come to boil and allow to thicken. Once thickens cool and use to glaze the turnovers with a brush.

    I must say this recipe worked a charm for me it came out great especially the texture of the dough which was my slight worry cuz my hands a bit heavy when kneading flour but I surprised myself today but that yeast trick did it for me activating the yeast before hand is a plus n I will always use that method now thanks alot for the tips keep the pastry videos coming

    Hi goodnite, I must say I love watching you In the kitchen. Me as a person I could of never baked I tried bread for the first time an I was discouraged by making it. but watching you while doing it myself I tried the coconut turnover an it came out great. thank you!!

    Made these this morning, they were mouthwatering delicious. Only thing I did different was added sm ginger to the coconut filling. I kid u not wen I say I cld not stop myself frm eating it by d spoonfuls. I love ur recipes n I have been reccomending ur youtube videos to my friends, family n co wrkers.

    Love this, we call it salara. I like this method of filling and pre cutting the slices, makes it easier to serve. Tkx for sharing.

      ...you can try using about 2oz shortening instead of the eggs. I do that and it works. Hope that helps

      Trini Cooking with Natasha None that I know of. If you have the Naparima Girls High School cookbook it is on page 206, I just wanted a visual.

      Trini Cooking with Natasha it is like a currants roll but the outside is a sweet dough or bun instead of the flaky pastry. The cylindrical dough is bent to form a ring, sliced 3/4 of the way through and fanned out.

      You can check massy Store’s and peppercorns in westmall bread flour you can get in massy or most grocery’s

      @@blossomwallace2131 I know this is a late comment, but you can get bread flour in Trinidad. We call it "Baker's Flour" It's available in most supermarkets like Massy, TruValu, XtraFoods etc.
