- Germany’s state visitors are often presented with a barrel filled of pickled herring - a symbol of hospitality. Traditionally, German herring that’s been pickled in vinegar is known as ‘Bismarck herring’, after the former German Imperial Chancellor, Otto von Bismarck. What does the chancellor of old have to do with pickled fish, though? To find out, DW Food expert Felicitas Then went to Stralsund, northern Germany.

My Dutch wife ate raw herring with onion all day during her pregnancy. I gave it a try and it was quite a snack. You should try that.

Around 135 US-$ for a 2,5 kilo barrel of Bismarck herring.

Da ich öfters auch größere Mengen Fischbrötchen bei uns im Vereinsheim mache kenne ich mich natürlich auch sehr gut aus wie man sie macht. Ich persönlich esse sogar Bismarckbrötchen lieber wie Lachsbrötchen. Es kommt natürlich auch darauf an wie man sie macht. Ich mache sie folgender Maßen ; Extra längliche Brötchen, Butter Salatblatt, Meerrettich, Tomatenscheibe, Gurkenscheiben, eingelegte Garnelen und etwas Seehasenrogen und natürlich noch Zwiebeln, am besten rote die sind etwas schärfer.
Den Bismarckhering erfand ein Hr. Wichmann und seine Frau in Stralsund. Der Reichskanzler Otto v. Bismarck gab dazu sein Einverständnis. Der Geschmack des Bismarckhering ist so gut weil er leicht süßlich eingelegt wird und er wird gehäutet. Aber es gibt ihn auch ungehäutet. Wie schon gesagt ich esse mitlerweile Bismarckbrötchen lieber als Lachsbrötchen.

Western Baltic herring is in crisis: scientific advice from ICES to stop fishing in 2019, and previously in 2018 was ignored, and the population is at dangerously low levels [5]. Even with a closed fishery, the stock will not recover in 2022. Thanks TO Germany

I can buy Bismarck herrings here in Australia, as well as Rollmops. both in jars from Germany, but I can't see any difference in them. I suspect the manufacturer puts the same product into each jar. Oh, and the skin is still on. So, I suppose, these are NOT proper Bismarck herrings. Must be keeping the real ones for themselves :P
Perhaps not "proper", but certainly delicious, though I like more onion on mine (in QLD)
