Yummy 😋 As a Swede I do love herring and we have a standard pickeling brine called”123 brine” - 1 part vinegar (or ättika, very strong and acidic ),2 parts sugar and 3parts water - all boiled together and cooled - onions and spices of choice all go together in a jar with the already salted herring for a minimum of 24 hours in the refrigerator 😋✌🏽

Man, does this bring back some memories! I sure don’t miss the snow and cold though! 😜
Fishing is fishing, so obviously catching isn’t guaranteed, but although I grew up in NJ, I used to fish in countless places for herring, and the absolute best spot I ever fished was Hudson Park in New Rochelle. You didn’t seem to be all too far from there. Next time you’re up that way and are having some difficulty finding the herring, maybe check that spot out. 👍

    Have you ever pickled pilchards?
I get them frozen from Restaurant Depot but can't find fresh herring anywhere.
I'd love to catch them one day.

If you’re near greenpoint you can call greenpoint fish and lobster co and see if they have any. Might be too late in the season though.

I live on the way upstate in Rockland County now, so I was wondering, do you know of anything up there?
Any other suitable fish to pickle?

Herring run December to March in ny. Sometimes later. Boston mackerel or Spanish mackerel would also work beautifully

For people closer to freshwater, I’ve heard of people pickling pickerel or pike. I’ve never tried it, but should be good.
