Wait what? I lived in Italy for 10 years and every Italian I knew made fun of "Fettuccine Alfredo" as being some made up nonsensical American Italian dish. Now I'm confused. lol Then again there's no cream and parsley in this version like the American version. This is literally like the third dish I know of that most Italians make fun of for being an "American" invention. Well now I can add this to the list that also includes Spaghetti and meatballs (does exist in Italy, around Milan and Naples. Just smaller meatballs) and thick crust pizza (a place in Torino has been making it for like a hundred years)... actual thick crust pizza not Focaccia. I was also told Carbonara was invented during WWII because Italians had the pasta and eggs and American soldiers had bacon and that it was only after WWII that Italians began using Pancetta or Guanciale for that specific dish. Which I always thought seemed unlikely. Italians sure do love telling stories....good luck figuring out what's true and what's not.

Interesting points. It's fascinating to see how much folklore and tales impact even our food. Thanks for sharing :)

Another orign story i heared about Carbonara was that farmers in the alps made them when getting/bringing their cows up onto the mountain.

I'm italian, I've never met anybody in my life that in Italy know fettuccine alfredo, but we are hear more and more this "italian" dish from americans, the so called fettuccine Alfredo are just what we call pasta al burro or pasta in bianco that everybody make at home when we are sick or we don't have anything in the fridge, so why I should go to the restaurant to ask to most basic pasta dish that everybody can make at home for much less? Sorry americans but this is the reality! It's not a traditional dish, we have much better things!

Perhaps the fettucine alfredo is more of a myth/legend than a real dish, then... :)

Not a lot of ingredients but 1kg of Parmesan.

Those doesn't look like regular fettuccine pasta, I wonder if there's something extra in them.

Just so we are clear and honest. He created a super simple dish for his sick wife, which he sold in the US as gourmet, because the people there obviously have no idea about food. There is no Alfredo pasta dish in Italy, the story is purely for (dump) tourists.

So there, no more crying, cry baby Italians [and Sicilians]. Fett Alfredo IS an Italian original! Is a specialty founded in Roma! Please stop complaining that meatballs have to be on a separate plate and blah, blah, blah. Sit down and be thankful that you have a meal in front of you. Signed, a Siciliano
