A properly done fish & chips is my favourite food. Crispy batter but not too greasy cooked in fresh oil and it's just a heavenly experience

You haven't experienced 'real' fish & chips until you get them from a Yorkshire chippy cooked in pure beef dripping. Trust me, done well it is not greasy, super crisp and flavour you can't believe until you try it

@@dronezoneessex5551 I agree that it isn't proper if it's not cooked in beef dripping, but chippies all over the country use beef dripping not just in Yorkshire. My local chippy here in Dorset does, for example.
Most use veg oil, but nothing compares with dripping.
If there’s one superseding memory I carry from my visits to Australia, it’s the fantastic fish & chips we’d get, all wrapped in newspaper.. Such a treat!

This is my favorite DW food documentary. I swear I could taste the fine texture of the fish and chips. Keep it up Britain and DW for highlighting the industry.👍🇬🇾
The use of sparkling water instead of beer in the batter was very unique.
You can use sparkeling water in tempura batter to get it more airy/f;luffy/whatever. It's super good like that.
A local chippy to me uses R-Whites lemonade it's lovely.

Not really. It's in most fish & chips recipes. Tried both, carbonation in some beers is more reliable than best commercially available seltzer. On par with homemade seltzer.

You can tell it’s a comfort food by how folk will swear the type they grew up with is the best. Born in Edinburgh, for me it has to be Haddock with Salt and Sauce. Moved to England many years ago, and whilst by no means bad, it’s just Not The Same. And it’s something you probably don’t realise until you move away from your home town/area. Even the menus are different.
As a child that taste was imprinted into my taste buds. I never pass on fish 'n chips whenever I get to visit the UK. I once had it in Gibraltar.. greetings from Germany.
i left uk in 65, never ever wanted to go back , but i miss the fish n chips. i ve tried every recipe to get that taste but never. and back in the day you could buy the bits that fell off the fish batter yummy. uk is not known for gr8 dishes, but fish n chips, shrimps, sausages, cockles, whelks, field mushies, and a few more. going on holidays in a caravan with the smell of calor gas and fresh picked mushies cooking for brekkie then fish n chips for lunch then a mountain of shrimp for tea .
My first experience with F&C was on the ferry from Calais to Dover in 1970.
Still remember the taste and texture, never experienced that taste but must admit I have not given it a good try since, should do more next time in Britain.
Back in 80s we used to eat fish and chips 4 times in the day..I never got tired of it until now .I'm 60 already.. still it's my favourite

Spot on, we have to keep the proper way of making the batter... theres too many people who feel they have to do something different. Non-brew vinegar with a few dried red chilli's in the bottle was traditional since at least the 1940s. looks wonderful.
It looks so yummy! I've never tried fish&chips like that, here in Norway, I'm going to have to seek out some place near the fish market in the city, where I've smelled that delicious fish, potato and vinegar smell earlier. Nothing else more appetizing then that smell.

Im filipino living in Northern England and not really a massive fan of British food (Its over hated , its ok Its gets too much hate by uninformed people who never tried )
But a good Fish and chips is one of the few that really taste amazing done right. The best one I ever had was in Norwich where they used beef drippings to fry the chips

Local Filipinos who does tourists usually are not a fan of European cuisine as they see the lack of in you face bold flavor in most of their food, especially the Italian ones, A neighbor of mine toured in Italy and was so underwhelmed with the savory dishes she asked for salt or soysauce on restaurants

Me and my grampa used to go down the local chippy at the seafront every other Saturday for fish and chips after a nice walk. Good memories. Hes resting easy somewhere in the sky now ❤

I grew up on the Great Lakes and then moved to Alaska for most of my life. Fish 'n' Chips is a staple/must have! Had a craving and made some (cod) the other night!
I went to Alaska this year! You guys would have halibut a lot as well right? Had halibut and sockeye when I was there.
I've lived in the Toronto area all my life and halibut is the standard. In fact, if fish and chips are on the menu at a regular restaurant (not a fish and chip shop) halibut is usually the only option. It suits me. I've had cod, pollock and haddock and halibut is far superior in my opinion, although you pay through the nose for that quality.
At home, I use frozen battered haddock (Jane's) and it's quite a nice, affordable option.
I always cook them in beef dripping. The taste is amazing and far better than any oil

I use duck fat. It’s a flavour profile I’d call “subtle, but more-ish”.

I’m not British, and I still have great memories of Fish & Chips from my student days.. way back in 1988!.. now that I’m working back home in Malaysia, if I ever go back to the UK for work or holiday, I make a beeline for the chippy shop as soon as possible!
We use these suppliers at work for Haddock, its amazing. the prep, customer service, all of it. Perfect
I wouldn't eat everyday, but I give myself a treat like this one in a while!

You should include different fruits used to make fruit wines, different methods used for fermentation, future of fruit wine, etc. There many documentary on wine. But, nothing on fruit wine. No chips beats proper fish and chip shop chips. I don't really get to eat fish and chips often - maybe once a year. But if you have chips from a proper chippy, then vinegar is a must. It just complements the hearty chips so well. As for the fish - the batter and quality of fish can be a bit of a hit and miss. So if you can find a good chippy, then you just stick with them.

Hi from New Zealand, I was brought up with salt and vinegar on my fish and chips. I moved to another part of my country only to find that they don't like it very much so I've got my own malt vinegar on hand at all times & I don't care if people don't like the smell lol.
I'm in nz too and my family puts Worcester sauce on ours.
@sonyavincent7450 Oh my goodness another favourite sauce of mine!!! I make a lovely marinade with Worcestershire & Oyster sauce & chopped garlic, good with sausages & of course steak lol.
That was the struggle for me when i moved to NZ from the UK back in 2010 for a few years, no vinegar, mushy peas and mainly done with snapper which is understandable as Cod is a northern Hemisphere fish so they use what they could.

i never liked working in kitchens but one time we had a special like this and it was kinda fun serving good food at a deal
Tarter Sauce or Mayo with tomato paste mixed. Using Olive Oil, Coconut Oil or even mayonnaise in a stainless steal pot to be melted down and use the oil from that for frying. I do this with my popcorn alot!
You can recycle the news paper or use it to clean your mirrors and windows!

I know if I were to ever visit across the pond, fish and chips is #1 on my to do list. Like burgers in America, fish and chips is a must in Europe. I want the authentic experience - not some American version (though I do love fried fish here too)

on the west coast of the usa fish and chips is popular if you're close to the water, but it usually is breaded, not battered. the chips vary from thin fries to proper thick chips depending on the spot. malt vinegar is also available as well as other flavored vinegars (garlic is a common one). mushy peas are totally unknown, along with curry sauce. coleslaw and clam chowder are the most common sides.
American fish and chips are nothing like the UK
That’s why I went hunting for a battered fish and chips in Florida and found one at the old salty dog. Oh my gosh! So good.
Fish and chips is a universal dish, my mum used to slice potatoes and fry them in olive oil also fry the fish in batter back in Italy.

Nobody does fish and chips like the British!! The only way we can get really good fish and chips here in the US is to go to a British restaurant. Other restaurants have fish and chips on their menu but it is nothing like the real good British fish and chips. Love it!!

It's unsophisticated cooking. Hardly difficult to master. It's embarrassing a country with access to so much fish can only come up with this.
@Belette holt fente it's cheap and it's cheerful, and if you actually watched the video and heard the history behind it. Then you'd realise that quite often it was produced in some of the less posh areas of the UK as it was a fairly inexpensive way to produce a hot meal for people as well as very filling and moreish. Us Brits don't always like having fancy food, sometimes all we want is great grub that fills us up and means we can get a crack on with whatever work we need to get done. Also some of the best chefs in the UK love a good old-fashioned "Chish and Fips" (name of a VERY popular place here in Norwich) when they're tired of fancy stuff, just look up Gordon Ramsey or Heston Blumenthal on here, as they both have fancy fish and chips recipes.

@@shakiMiki As it is made up of two food items that were not included in rationing during WW2, it increased in popularity, keeping people fed at low cost (as we had a fishing industry back then).
Try a quality Arbroath Smokie straight from the barrel, or Cullen Skink, or any of the many other fish dishes from around the UK's coastline (which is rather long) before dismissing the UK's fish recipes.
This is honestly Britain's famous cuisine that brings back memories

When it's cooked properly, Fish and Chips are best enjoyed on a rainy seafront, taking in the world. The experience is unrivalled IMO.
It's done very well in Australia and New Zealand as well.

I will have to fly there from the states and have some fish & chips. I travel from Alaska to Rhode Island every couple of years for my haddock. My favorite! You guys are making me hungry. When I was a kid, your order was wrapped in newspaper also. Those days are gone. Also, haddock is hard to find in RI. However, it is more plentiful in northern New England.
I remember the newspaper with the greaseproof paper gave it a special aroma and flavor.

I make it myself, every now and then. Chips and all.
Although i don't put vinegar on them. I use mayonaise and/or (curry)ketchup.
The fish gets a nice dusting of a spice mix, with salt, garlic, onion, ginger, cayenne, clove and some other herbs and spices.
We call them Lekkerbek on the other side of the North Sea
Eat it once a week. Snapper, Spanish mackerel, shark and red Emperor are common fish on offer where I live in Western Australia. Other good items are battered haggis, battered black or white pudding, battered suasages and battered hamburger patties.
Even as a german. i call this "heaven"

@RDU23 Most things are not healthy today. Chemicals, stabilisers, pesticides, even vegetables grown on mass are often not fit for human consumption, but yea the healthiest option with fish and chips is probably the mushy peas or pickled onion
It's science. Cold batter in hot oil immediately seals the fish.

One of the local chippies in the small town in Cumbria were I live will fry - for a small additional charge - the fish in beef dripping. Not sure what it does to ones arteries, but by God it tastes wonderfull.

Given how iconic and ubiquitous they are in the U.K., you'd think that fish & chips would have more of a presence here in the United States. There does seem to be a cultural connection between the two countries. I love fried fish. So, I wish fish & chips were a "thing" here in the U.S. I mean, we have the "chips" part of the equation covered. That's for sure. We've got all varieties of French fries. But, vinegar? That's not a popular American condiment for fries. I've never tried vinegar on fries. It seems like an interesting combination, however.

I lived in Florida for 8 years and whenever they tried to do fish and chips it was never the same. Glad to be living back in the Uk haha. But Yeah its an odd one people seemed to like Catfish over there more so then cod.
Cos we have much better things to eat that fish and chips. I've had Poppie's in London twice. Meh. I shouldn't have expected much; after all, it's just fish that is fried. Come to Los Angeles where we have the best authentic foods from around the world. It's expensive. But then again, In-N-Out is cheap is better than any fast-food burger joint you can find in England.

Love the way, Emily Griffith handles the fish. She holds the fish and lays it back into the bins with such kindness even though it is dead. It appears she is respectful of the sacrifice of her bounty. I've changed the channel on some cooking shows because of the way some cooks seem to mock their bounty. I have to have tartar sauce with my fish and chips. Malt vinegar is good too though.
It's funny how some people like tartar and some dont, then some put it on certain fish, but not others. I also find the variation in tartar's incredible also!
I live in Ireland, love fish and chips but only problem here is that they pay no attention to the grease. Most if not all fish and chip shops serve greasy bags, really dislike it compared to shops in the UK. Honestly wish they would pay attention to draining atleast a little of the grease off

I visited Dublin back in 2014 and heard from some classmates, who went to a recommended spot (no idea where), that the fish and chips really weren't that good. Thought it might've just been a bad spot but from you say about the grease it might just be that Ireland isn't good at fish and chips.

I'm not sure how things will work out with Japan releasing nuclear waste in the Pacific. The quality of the fish might be affected.
Remember one of the causes of Somali pirates was nuclear waste dumping close to the Somali coast and big Foreign trawlers overfishing in deeper Somali waters.

Has to be beef dripping. Very important point about draining properly otherwise the fish and batter retains too much fat and water from the fish and becomes soggy.

@@alpmeyda I know. Beef dripping lasts a lot longer too. When these seed oils have hit 185 consistently over a few days it is time to throw it away.

I like fish and chips. And the players like fish and chips. We had fish and chips. Nobody had any soup before, nobody had any pudding afterwards. And it's one of the best things you can eat because it's full of protein.

In Ålesund, Norway they serve fish & chips with vinegar. The chips is not as good as the ones you get in a proper British chippy.
