Spicy Spanish Mackerel Sambal 😋😋😋

Ingredients:
400gm fish fillet, lightly marinate with turmeric powder
Dry chilli paste (desired amount)
1 large red onion, thickly sliced
3 lemongrass, crushed
4-5 fresh kaffir lime leaves
½ - 1 lime (juice)
1 ½ - 2 tbsp belacan powder
Brown sugar
Oyster sauce
Salt to taste
Oil for cooking
Little water
Julienned kaffir lime leaves
Boil some dry chilli, then blend with little water to make a thick paste 👌
Steps:
Heat up some oil over a medium flame. Add in the lemongrass, chilli paste, kaffir leaves, a little oyster sauce and salt, belachan powder. Sauté until fragrant, 4-5 minutes.
Once there is no more raw smell and when the oil starts to separate, add in a bit of water and the sugar.
Then, add in the fish and onion. Squeeze some lime juice. Taste for seasoning. Allow the fish to cook. Once cooked, garnish with julienned lime leaves and turn off the flame. Serve with hot rice and enjoy 😊

Great recipe, Su!!! As always!!! It does confound me that in Europe having a sauce "break" is a disaster (when the oil breaks free of the sauce)m while in India and Asia the dish is not right until the sauce breaks (and if it fails to break it is a disaster). Aren't cultures wonderful?!?!?!? Hope to see you in a video soon!!!!!!!!!!!!!
