    I don't know for sure. But from all the blood I saw coming out of that buffalo while you were cleaning it makes me wonder if you knew to bleed it directly after killing it. Or you can bleed them to kill them. They just bleed out and kinda goto sleep. Either cut their gills on both sides to bleed them or cut that section just underneath the mouth that seperates the gills from each other. Apparently a large artery runs through it and they bleed out quickly. Keep them in the water while they bleed to stop the blood from clotting for around ten minutes. The blood is why most people who don't know better before cleaning a carp and frying it up. That most people don't think they are good to eat. Remove all the blood and fat and your buffalo and carp will taste better than crappie catfish or any bass.

      Thanks for the advice. Technically, buffalo is not a carp but an indigenous species to N. America and a few places south of the border. What you said makes sense, however, and I will try it next time. BTW, it turned out wonderful. After removing all the feather bones, I prefer the taste better than many other fish... including catfish. Thanks!

      @@JacquesGaspardCajunCook yes I know. That's why I made that very distinction at the end of my response. Many people say " buffalo carp" and I usually can't help but to try and educate them politely about the two different species and their respective origins.

      @@JacquesGaspardCajunCook I like both. Of course in addition to bleeding them and removing the fishy tasting fat. You should also cut out any blood lines in the meat and I go one extra step and brine my fish overnight in salt water in the refrigerator. I also eat the Roe of both fish as well. Well cleaned and brined overnight as well. Then cut open the egg sacks and empty eggs. Then mix with flour, egg and spices and fry like fritters. Very good. I also understand that the invasive Aisan Carp, ( AKA the flying carp) , are extremely good to eat. I don't have those in my area yet.

    brother I have never destroyed anything by adding a half a can of beer..in fact now you get the added benefit of getting to enjoy the other half. I just finished making 12 pounds of sausage last night and other than the fennel seeds I used almost the exact recipe, but I did add a few beers that the cook enjoyed during the process. great job ,thanks for video, and don't even take seriously comments from people who probably don't know much about cajun culture.

      I don't add spices, except those when I boil the meat and vegetable, until after I've mixed all of the liquid ingredients to my prepared rice. I then add the seasons and test small amounts until it suits my taste, i.e., red pepper, salt, black pepper, etc. Just make sure you have at least 20% pork fat in your boudin to give it that distinct and unique taste. When I can, I use a small amount of boiled pork liver to bring it up a couple notches... the way we do it down in S.La. Hope this helps... good luck and thanks for chiming in.

      @@JacquesGaspardCajunCook When we lived in Natchitoches, my wife and I made several trips on weekends to South Louisiana in search of tasty boudin. Our favorite at this point in time is from T-Boy’s Slaughter House near Mamou. Yes, we've tried boudin from Best Stop, Billy - Ray's and Meche's in Opelousas, Johnson's Grocery (now renamed and located in Lafayette), Mowata store, Kelly's Country Meat Block, Zummo's, Richard's, and lots of places in between. Actually, the ratings found on The Boudin Link page seem to be fairly accurate. Keep up the good work, and keep grinding.

    Hey guy you look like you scared to handle the fish. Im a woman and I could have done a braver and better job that you. LOL you had to scale it first then cut off all them fins, then take the gills out then split it straight down the middle and GUTS it. Then make sure all the insides are properly cleaned out. Then you put it in a BIG dish pan under the faucet then pour a little vinegar over it and run cold water over it then you wash it off really clean at least three times then you prepare it to be cooked grilled or baked

    In and believe you made this video and mentioned “buffalo bellies”. I’m trying to find this fish for that special cut of it...the ribs / buffalo bellie that does. I used to find it easily from a fisherman in southern Illinois close to Missouri /Kentucky lines, but only thing I’ve seen in Georgia is “buffalo carp”. I’m hoping this fish is Available down here in the south. When we visit home, , we’ll take ice chests and fill them up with fish so we’ll have some for a while.

      Don't know how I could get more detailed. When it comes to how much seasoning you should add just remember the number one rule: it's easier to add Cajun seasoning than it is to remove it when you add too much. Slowly and gradually bring your spices to your preferred taste.
