How to Clean and Fillet a Buffalo Fish (Part 1)

    What I do is take a normal sized spoon and start from the tail. Hold the spoon at a 45* angle and in one smooth motion pull all the way up to the gill plate. This gathers all the scales in a neat little bundle and doesn't send them flying all about. This allows you to be able to do it all in a nice AC'd house too. :)
    Skip pulling all the fins off if you're just filleting. Make a cut down right next to the gill plate. Make a long cut following the backbone until you're past the ribcage. Then just simply follow the ribcage with your knife like you do with a catfish. Do this until you get all the way down to the belly. Follow it further back towards the tail until there's no more ribs to follow and then just follow the backbone like a normal fillet. Now you have a LARGE chunk of buffalo fillet in a couple minutes flat.
    *Now here is the trick to make this one of the best tasting fish you'll ever have.*
    Score the fillet down to the skin. Make sure to cut all the way through the tiny bones but not through the skin. The scoring cuts should be about every 3 sixteenths of an inch. Once you're done there you simply fry it like a normal fillet. The hot grease will get into those small cuts you made and will melt those tiny bones.
    Now enjoy your amazing-tasting, boneless buffalo. :)

    Buffalo Fish is not a bottom feeder. It's a good eating fish with high protein. Good job cleaning the fish.

    I had a pig trap down next to a creek. We got a lot of rain and the creek and river flooded and backed-up into the creek. The trap was submerged. Today I saw a big Buffalo Fish in it. Isn't that something? LOL

    I cut the scales off fillet it barely cut the y bone skin and twist the meat into so the y bones are whole

    Oh how my grandma and I loved this fish. But they haven't sold this in northern Cali in years! where can I find it. It's delicious! And they have LOT'S of bones in the flesh, but it just makes it taste better!

      They sell buffalo in Oakland in many fish markets. Downtown Oakland where Housewives market used to be they have a market that sells buffalo. Also many stores around Oakland sell it too. The main thing is lots of black folk eat buffalo and that's why you see it in Oakland and other places with a large black population. Buffalo has a unique flavor and if you try it you'll probably love it too.

      funny. I remember when I got orders for San Diego & couldn't find catfish nowhere. Had to go to Chula Vista, damn near in Mexico. The people cut it up for me & everything. I don't know how true it was, but dude said they were flown from Louisiana. Sounds kind of farfetched just for fish. I'm sure there's a pond closer than the mid south.

    Great video! Some people won't even eat carp, but I say they are good eating. I just put up a video of me smoking some buffalo carp fillets. Check it out on my channel! The only problem I had was my family ate the whole smoker full! Yes, you have to watch for some of those y-bones, but they are easy to see and pick out. Thanks for the great video!

      Issac Newton carp is most eaten fish here in Pakistan .. different varities taste different from each other ..the one in the video is called "Thaila" means bulky ..and least desired than other carp varities..

    We call them Quillbacks around here. Guess they are called a buffalo fish since they are native to NY.
    BTW they do not require much skill I catch them bottom feeding for catfish. Was very surprised they actually like to suck cut bait but mostly worms and corn. Small 1-2 size hook is a must.

      Yes, you're right. They do have lots of "feather" bones which discourages many folks from eating the fish. However, if you learn the simple trick on how to remove them, you are left with tasty meat worthy of salmon. Good stuff! Thanks for your comment.

    This is a carp sucker or qauilback!
    Buffalo carp are longer and alot like a common carp! But they're silver

      I don't even scale them when I fillet them. I just use a good sharp knife and cut right through. Saves allot of time.

      It pretty much is a carp Conway. But the buffalo flesh is very tasty! I especially like to smoke it with some apple or cherry wood after soaking it in brine overnight. I have had all kinds of people tell me "That's not carp!" after eating my smoked fish.

      Carp is tasty and a very edible fish, you need to chuck it in a ice bath instantly, the carp I cook are australion and yes they are mud suckers, and if un iced the meat is putred.
      Also dont scale or gut them, cut the fillet and remove skin, you end up with two slices of bread fillets half boneless, add butter olive oil in a pan you have a fish that rivals salmon. Remove the red meat on fillets as that is not great.

      You are absolutely right. Buffalo fish and carp fish are two totally different species. Buffalo fish are indigenous to the North American continent and parts of the waters south of the border. The taste is remarkably different. I prefer the taste of Buffalo over carp. Many of my friends also agree. Thanks for the comment.
