Hi Christian. Wild pig meat is very lean and taste good. In the wild they live mostly on vegetation, so there is not much fat which accumulates under the skin like domestic hogs. When making sausage with wild pig meat, most folk will add "fat" to the mixture to give it more flavor and texture. They will add bacon and/or very fat store-bought meats (butts and shoulder meat) to add into their recipes. I cooked a 200 lb. wild hog a couple years ago and everyone absolutely loved it.
