    Really good video. I have a little different method, but what counts is that you get it done. That big chunk where the rib bones are would be perfect for smoking! Again, thank you for the great video. Keep 'em coming!

    Why let the man down as unskilled? Why you don't show how to do it better? Man never said he is skilled. Man caught the fish and he is just showing how to fillet the fish.

      +Paul Starks I agree. Went out to the lake yesterday and caught a 17 pounder. I like it slow smoked with hickory wood. I drape the whole fish with thinly sliced hickory cured bacon and sprigs of rosemary along with my usual array of Cajun spices. Don't get no better than that. Thanks!

    We cooked some buffalo ribs just the other day and they were terrific.I'm anxious to see how to make the fillets into patties.I hate to see food wasted especially food that's this good.

    Here in SouthEastern Arkansas and Central Arkansas this sells better than catfish. A Buffalo rib dinner is popular on Saturday...along with a Michelob... Great video.

    I am glad to see videos like this, but there is a much easier way. You can just fillet them like you would a bluegill or crappie, separate the skin, remove the red meat. Then, you just remove the ribs from the individual fillets. But again, glad to see someone doing this as a lot of people just throw them out.

      im so glad i learned from a little girl how to clean fish and eat it with the bones still in them,we as little kids would just pick them out as we eat and feel them in our mouths while chewing in case we didntget it out before we put it in our mouths,it took two or three times to get one cought in our throats befor we were good at it,thats the 1970! i love buffalo fish,we knew nothing about fileting it we just cleaned them,cut them in steaks and fryed them! lol

      If you use a hair rig and method lead rig with pack bait you will catch them all day

    Hi there Jacques, love the look of those ribs reminds me of pork ribs , would like to see you cook some up and enjoy them in front of the camera with your mate some day also do you blokes separate and use the front wings(throat )of the fish heads ? that section has a fair amount of meat that is my personal favorite , thanks again Jacques.

    Great job love how you clean it,now do it have many small bones,my aunt always cook them,never shared any of it,can you please tell me is the fish load with small bones,but always bragged about how good this fish was buffalo,

      Yes, unfortunately. They are called feather bones and they are rather small. Once I cook the fish thoroughly (usually by smoking them on the grill) I take the time to remove all of the feather bones from the meat. It's a pain, but it beats having to deal with them while eating. The rewards are great, however, because buffalo fish meat is one of the best.

    Yes... in the flesh part of the fish (fillets), but they can be rendered edible if you pressure cook them.

      Jacques Gaspard I just caught a 15 lb. buffalo on the Wabash. I will use it for cut bait on my trot lines. Ive eaten buffalo back in the 50s when thing were a little rougher living but now its for entertainment and relaxation.

    To bad I could not make a video om at 7 months pg. cleand Red fish, & Snapper. At 5' 1" they were 80 # or more. I had to fillet the fillet's.My Dad loved to fish but would not clean or eat seafood.

      bandpassmess - yes the piece that hes calling a fillet is full of tiny bones.. not good unless u score it and fry it hard.. most small bomes will fry up

    I know what you mean. I've come to like deep fried buffalo ribs better than catfish although both are good. I also discovered that if you pressure cook the fillets for about 37 minutes on medium-high heat, it will render all of the small bones edible and have a similar taste to canned tuna. That's if you add in one cup of water with 1 tablespoon of salt and 1 tablespoon of white vinegar.

    Should have cleaned it Asian style less guts your going to pressure cook it anyway do those buffalo taste similar to silver carp big head carp I’m curious because the buffaloes here in Ohio taste totally different from the ones in the south which are delicious

      There's an old saying that we Cajuns will eat anything that don't eat us first, but I draw the line when it comes to eating carp. I like most fish. Carp had an unpleasant taste to me the first time I tried it. I'd like to learn more about the Asian style way of cleaning them if you have more info? We have mostly German carp here in NE Texas near me.

    we do not fillet off the ribs .the rib section is what we keep
    i use electric knife and cut threw the ribs and then fillet the skin off then cut off all meat from but back and from center line up and keep just the ribs and that section does not have all the micro bones and is very good and still allot of meat and here is link to what the ribs look like cooked
