Hi, my name is Eric Holcomb and I am a chef in Milwaukee Wisconsin. I started this channel to go on an adventure to try and learn the many cultures of this world. I don't think there is any better way to accomplish this than by studying, cooking and enjoying the many different types of cuisine offered across the globe. So please join me on this journey as we dive deep into culinary traditions so that we can better understand each other, break bread and hopefully earn a seat at the table.

It has been a while. As I post this video we have currently reached 300 Subscribers!! Thank you to all who have liked, commented and subscribed. I hope in this new year of 2024 I can continue to post more videos. Life has been crazy and it hasn't been the easiest to post on a regular basis. My first video back I wanted to do something a little easy so I went with a Wisconsin staple...Beer Cheese Soup. Hope you enjoy. I will post the recipe down below. I made something like this in college for some buddies for a poker night. I've made similar recipes a few times before and amazing every time. This time though we drank to much, let it sit out for about 8 hours then microwaved it. It was still delicious until 4 of us ended up at the ER with food poisoning lol just eat within the hour and y'all will be a okay! 😉

I’m a bit biased. While gelato is delicious I would take frozen custard over gelato. Mostly because of nostalgia reasons. I will say it is easier to get gelato. It’s hard to find good frozen custard outside of Wisconsin if you ask me. Gelato has a more dense texture whereas frozen custard has a lighter texture as there is more air whipped into it and a bit more fat content.

I'm from Wisconsin. In my 20's I was diagnosed with Celiac disease so I can't have gluten. Let me tell you, sometimes I get real close to ordering one of these and just eating it knowing I'm going to get sick.. lol. So damn good.

How long did you leave those in the freezer for?
I would say at least 2 hours. You want them to be frozen solid so they don’t melt too much in the fryer.

in Germany, it's very popular in certain regions to eat "Mett". it's raw pork with nothing but salt and pepper. Served on buttered bread and topped with onions. It's glorious.

That is just extra virgin olive oil. Graza is the brand. You can find it at most supermarkets.

Any light lager or even an ipa would be fine. Depends on how much beer flavor you want. I would not recommend a dark beer or beers with added fruity flavors.
How much approximate weight of curds does this cover?
I would say no more than a pound.
They don't, in fact, ship their custard. Sorry. I had to look. You can order online for a pickup, and only at the Glendale location. But thanks for the recipe.

They definitely used to, I miss Kopps......the day I delivered this crazy kid in pic 15 years ago at Elmbrook memorial my husband snuck Kopps into the hospital for me. Tiramisu and raspberry cheesecake were my favorite ❤ I live in PA now.....and really miss their grilled chicken sandwich..... 😋

Very popular in Poland and super delicious! This is a very good recipe, though I recommend rump steak, as it tends to have a more intense flavour and for me the egg yolk is absolutely necessary. Smacznego!
THIS is WI style cheese curds! Done RIGHT. Another overlooked dip is Raspberry Jam! The best is Thimbleberry jam, but most won't even know what that is....Thimbleberries are gift directly from God and only grow in a select few places in the US. The Upper Peninsula of MI is one such place....A WI cheese curd dipped in Thimbleberry jam and you can die happy after that, as nothing else in life will ever taste better!

In Milwaukee you can say "let's go get some ice cream" but what we really mean is "let's go to Leon's (frozen custard)" Because we just refer to frozen custard as ice cream, it's our ice cream. You rarely ever see anyone eat actual ice cream 😅😂 I love being from Milwaukee.
