Southern Thai Sour Curry Recipe (Gaeng Som) | Thai Girl in the Kitchen
Today we'll see how to make this lovely southern Thai recipe : Sour curry with shrimps and raw papaya or Gaeng Som Goong Malakor.
I address the word 'southern Gaeng Som' a lot because the southern version of sour curry has different ingredients and a little different taste from other regions of Thailand.
The tastes are more intense and it's one of my favorite curries ever!

📒Recipe: How to make southern Thai sour curry (Gaeng Som) | Thai Girl in the Kitchen
Ingredients :
- 90g. Gaeng Som Curry Paste (See how to make : czcams.com/video/oDqMNAQDRoQ/video.html )
- 250g. Shrimps (or as much as you want)
- 200g. Raw papaya**
- 600ml. Water
- 1/2 tbsp. Palm sugar
- 4 tbsp. Tamarind paste
- 1 tbsp. Fish sauce
- 1/2 tsp. Salt
- 2 tbsp. Lime juice
**NOTE: The choice of vegetable for Thai sour curry is vary. You can add almost any veggies you like.
The more popular choices that Thais would use are ; raw papaya, cauliflower, turnip, carrot, long green beans, young coconut shoots, bamboo shoots, Katuri flower (Dok-Kae ดอกแค), lotus stem, cabbage, morning glory, etc.

Great videos! However, shrimp paste is a bridge too far for me. I have a refined palate but can't get past the funk which tastes "rotted" to me. My wife is Vietnamese and she enjoys it.....
Understandable. However, if it’s one of the ingredients for making curry pastes you won’t notice the shrimp paste taste 😊

Today I'm using the last of a batch of Khao Khua I made for Mushroom and Tofu Laab. Next I want to try making Khao Khua with the kaffir lime leaves, lemon grass and since I have it, galangal, as you have demonstrated. Between the roasting and pounding the rice, it took a long time to make. I'm going to try using the immersion blender next time to shorten the process. Thanks for the idea.

Thank you 💕 It’s Pandan leaves 😊 Quite common in south east Asia for a nice aroma in desserts(like vanilla in western desserts). But if you can’t find, you can leave it out.

Chili Powder in the US looks quite different, lacks the seeds and flaky bits. Would that be what we call crushed red pepper?
It is and also quite less spicy. I’d recommend to look for Thai chili powder/Cayenne chili powder/Korean chili powder or the safe bet is to get them from Asian stores

Instead of galangal?
There’s no replacement for galangal. As long as you have lemongrass, Kaffir lime leaves and other aromatic herbs then leaving the galangal out would be fine 😊

tysm for this i was recovering from a case of food poisoning and all ive wanted all day was nice warm sticky rice on my aching stomach but didnt want the effort of all day soaking and steaming.
How long will it last outside the fridge like when you want to bring it to travel?
Depending on how dry you fry it. Less moisture will last longer, but a little more chewy. Few days at room temperature is ok. Always perfect on a trip with some sticky rice. 😊
