How to Make Crispy Thai Omelette - ไข่เจียวฟูกรอบ | Thai Girl in the Kitchen

  • In this video we're gonna learn How to Make Crispy Thai Omelette :)
    An easy menu. It's a quick, yummy and affordable street food menu especially among festivals/events which the merchants want to sell a quick meal and people want to grab a quick easy meal.
    It is so common in Thais' household since every house has rice, eggs and fish sauce.
    It was actually the first menu I ever cooked when I was a kid.

    Today's version is a simple crispy omelette.
    📒 We're gonna need...
    - 3 Large Eggs
    - 2 tsp Fish Sauce
    - [Optional] 4-5 drops Lime Juice
    - Cooking Oil enough for frying

    *Lime juice won't affect the taste but will help the egg to hold up the air better when we whisk. Which will make the egg crispy when we fry.
    However, without it but enough heat from the oil your omelette will still turn out crispy and fluffy. Totally optional 🙂
    **To get the crispiness, the type of oil is also one of the factors.
    Like deep frying chicken or other things, using higher smoking point oil like canola oil, soy bean oil, sunflower oil, palm oil will hold up the heat better which gives the crispy food as a result.
    Healthier choice of high-smoking point oil would be an avocado oil.
    The only con of avocado oil would be the higher price.
    So use what you're convenient with and enjoy cooking! 🙂
    There're many ways to season the omelette.
    Can just be as simple as using fish sauce or soy sauce only.
    Or for 3 eggs, you can add 1/2 tsp oyster sauce, 1/2 tsp soy sauce, 1/2 tsp white pepper and some chopped green onion...This is also my favorite way to make omelette.
    We can even add some minced pork/chicken/prawns. The more extra stuff we add, it won't be as crispy as just the eggs alone since it will be a little heavy but still gonna be good.
    As I always say....."That's the beauty of homecooked. Adjust to whatever you like"

    Growing up, I always made this with 2 eggs, 1tsp fish sauce and a tablespoon of water. Never used lime juice or a colander or even deep fried for that matter. Just a bit of oil on high heat, cut in half and fold both parts over like an omelet .
    Can't wait to try this version!

    I learned a long time ago to break eggs on a flat surface instead of on the edge of a bowl. It prevents the the shell pieces from shattering and getting everywhere.

      I know im very late. But as supposed to use a flat surface, you can use another egg to crack the first one, only one egg will break at any one time.

    That's a deep fried omelette. arroy! Usually just slightly over cooked omelette is what Tha restaurants make, I like this style the most.

    Thanks for the colander tip. Never occurred to me to use that when pouring the egg 👍 I saw videos of ladies at Bangkok markets pouring a some white liquid into the egg mixture, was wondering if that's rice flour or coconut milk or it was another version of deep fried eggs 🤔

      Yes it’s flour. Can either be tempura flour or all purpose flour(cheaper cost but works good as well) so the omelette stays crispy longer.

      Its deep frying so your eggs mixture should be swimming in the oil.

      Oil has to be very hot, which allows fast frying and reduce chance for oil to soak in

    So tight a cooking pot if that pot slide due to that scooping surely a hazard. I understand we want a perfect size outcome

      Some Thai menu is easier if you cook it in the pot
      this omelet can make in the pan but it harder to make the crispy outside but still
      juice inside cause the egg will float all the pan it still can be done just harder
      But they are another type of omelet call ไข่เจียวยัดไส้( omelet filled with mint meat veggies and more
      That you need to do it in the pot
