Creamy Chicken and Spinach Crepes
Creamy Chicken & Spinach Crepes
Ingredients:
Crepe Batter:
• 2 Cups Plain flour (Or All Purpose Flour)
• 1 1/2 Cups Full Cream Milk
• 2 Eggs
• 1 Cup Water
• 1/4 Tsp Salt
• 4 Tbsp Melted Butter
• A Cooking Spray (Or Some Oil )
Filling:
• 1 Kg Of Boneless Chicken
• Oil For Cooking
• 250 G Of Frozen Spinach (Or Fresh Spinach)
• 4 Cloves Grated Garlic
• Salt To Taste
• 1/4 Cup Chopped Green Onions
Cheese Sauce:
• 4 Cups Full cream Milk
• 2 Cups Grated Tasty Cheese (Or Any Cheese Of Choice)
• 4 Tbsp Butter
• 4 Tbsp Plain Flour (Or All Purpose Flour)
• Salt To Taste
• 1/4 Tsp Black Pepper
Method:
1. To make the crepe batter: Take a jug or a dish, add eggs and beat it well using a whisk. Add milk and water and give it a mix and put it aside.
2. Take a big dish, add flour and salt and give it a mix.
3. Make a well in the centre, add small amounts of the egg mixture and mix it well to combine after each addition using a whisk until the batter is smooth .
4. Add melted butter and mix it well.
5. Strain the batter using a strainer to remove any lumps and press any lumps through using a spatula. Cover it with a plastic wrap and let it rest in the fridge while we get the crepe filling and the cheese sauce ready.
6. To make the crepe filling: place a non-stick pan on high heat, add 2 tbsp of oil and heat it. Add half of the garlic, give it a mix and cook it for 30 seconds.
7. Add half of the chicken and 1/2 tsp of salt, give it a mix and cook it for 5 - 6 minutes or until the chicken is cooked and any liquid that comes out of the chicken is dry and the oil becomes clear again. Take it out on a plate, add 1 more teaspoon of oil and repeat this process with the remaining chicken.
8. Add green onions, give it a mix and cook it for 30 seconds. Take it out and put it in the plate with the chicken.
9. Add spinach and 1 tsp of salt, give it a mix and cook it for 1 minute. Take it out and put it in the plate with the chicken.
10. To make the cheese sauce: place a large pot on medium heat, add butter and heat it until the butter has melted.
11. Add flour, give it a mix and cook it for 1 minute stirring it continuously. Turn the heat, add about 1cup of milk and mix it well using a whisk until smooth. Add the remaining milk and mix it well to combine.
12. Put the heat back on medium and bring it to a boil stirring it continuously.
13. Add Cheese and mix it well using a spatula. Add pepper and give it a mix. Add 1/4 tsp of salt and mix it again.
14. Add cooked chicken and spinach, give it a mix and taste your salt. You can add salt according to your taste. Turn the heat off, cover it and put it aside while we get the crepes ready.
15. Take the crepe batter out of the fridge, give it a mix, put the plastic wrap back on and let it come to room temperature for 10 minutes.
16. Place a pan cake pan or a non-stick pan on medium heat and heat it.
17. Lightly spray the pan with some cooking spray or brush some oil using a pastry brush.
18. Take the pan away from the heat, pour about 1/4 cup of the crepe batter , turn the pan around to spread the batter evenly and cook it until the top is dry.
19. Move the pan back and forth, if the crepe moves, it means that its time to turn it over.
20. Cook it for 1 minute, take it out on a plate and repeat this process.
21. Creamy Chicken & Spinach Crepes are ready and you can make this and serve it to family and friends.
22. Enjoy.

what ripeness of jackfruit did you use? I have a jackfruit tree in my yard and I never know when to pick them
Dear Faith, The jackfruit has to be green one. Once it starts to ripen then you can just cut it and eat the round yellow flesh after removing the seeds. Regards Anita.

How much ingredients to use if making for 150 people
Dear Ash, I have never made such a large amount. I don't want to mislead you by giving you the wrong measurements. The amount that I make is enough for 15 - 20 people depending on the amount you are serving. Sorry that I was not able to help. Regards Anita.
