  • Spicy Chicken Neck Soup
    Ingredients:
    • Oil For Cooking
    • Some Hot Water
    • 1 Kg Chicken Neck (Cleaned, cut it 1/2, soaked in some water with 2 tbsp vinegar for 30 minutes , drained it & Rinsed it)
    • Salt To Taste
    • 1 Tsp Chilli powder
    • 1 Sprig Of Curry Leaves Cut Into Small Pieces
    • 2 Large Chillies Ground Into A Paste (Or To Taste)
    • 1 Tsp Grated Ginger
    • 2 Tbsp Curry Powder
    • 1 Tbsp Chicken Seasoning
    • 4 Cloves Grated Garlic
    • 1 Tsp Turmeric
    • 1 Medium Onion Cut Into Small Pieces
    Method:
    1. Place a pot on medium heat, add 3 tablespoons of oil and heat it.
    2. Add onion, give it a mix and cook it for 2 - 3 minutes or until the onions are translucent.
    3. Add garlic, ginger, chilli and curry leaves. Give it a mix and cook it for 1 minute.
    4. After 1 minute, add chicken neck, curry powder, chicken seasoning, chilli powder and turmeric. Give it a mix, cover it and cook it for 2 minutes.
    5. After 2 minutes, add enough hot water to cover the chicken neck, , give it a mix, put a lid on, leaving a small gap for the steam to escape and cook it for 20 minutes stirring it twice during cooking.
    6. After 20 minutes, give it a mix and taste your salt. It needs a little bit more salt, so I am adding 1/2 teaspoon of salt but you can add it according to your taste. Give it a mix and cook it for 2 minutes.
    7. After 2 minutes, turn the heat off and garnish it with some fresh or frozen coriander leaves.
    8. Spicy chicken neck soup is ready and you can serve it on its own or with some roti or rice.
