    In this episode of In the Kitchen with Matt I will show you how to make Ice Cream Rolls. Homemade Ice Cream rolls are pretty easy to make, although they can be a bit tricky at times, but I have some great trouble shooting tips that I give in the video to help you make them. Ice Cream Rolls originated in Thailand, and over there they call them "stir fried ice cream." Some day I will visit there and try real "Thai" Ice cream rolls, but for now I will make them at home.     1/4 cup heavy whipping cream (60ml)
    2 Tbsp. whole milk (30ml)
    1 Tbsp. of white granulated sugar (15g)
    2 Oreo Cookies
    Tools:

    Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor, today I am going to show you how to make ice cream rolls, oh yeah, I had a request to make ice cream rolls, so here we go we are going to make some ice cream rolls, they are pretty easy to do, a little tricky at times, but we can do it, let’s get started. First we want to take a sheet pan or like a skillet or something, and we want to get it really cold, so I would put this in the freezer, for a couple of hours, I have one in the freezer right now, now we take a small pot, and then what we are going to do is we are going to add, 1 fourth cup of heavy whipping cream, two tablespoons of whole milk, and then one tablespoon of sugar, simple as that, that is our ice cream base. Now let’s take this over to the stovetop and let’s heat it up. All right so what we want to do is we want to turn our heat up to medium high. And then we want to bring this to a boil, it is going to happen fairly quick, what we want to do is we want to dissolve the sugar into the milk and cream, and we want to stir it, keep stirring it. All right and you keep stirring it until you see bubbles like that, it is good to go, take it off of the heat, and now let’s go ahead and transfer it to a bowl, and then we want to chill this and let the liquid cool down, so I am going to put it in the refrigerator, for about 20 to 30 minutes. All right once our cream has cooled, I am going to take a couple of Oreo cookies, or you can use chocolate chip cookies, you could use strawberries, other kinds of fruit, a lot of different things you can put in here, I am going to just go ahead and dip these in there, soften them up a little bit, and then on your pan that has been chilled, let’s go ahead and just pour this on there, okay, and now for the fun part, chopping. We take a couple of paint scrapers or putty knifes, and we are going to go ahead and come in here, and you kind of just scrape things around and kind of chop these cookies, and mix it in with the cream, and what this is going to do, is it is going to incorporate and add air into the cream, which is going to help to make a nice, a nice creamy roll, just go ahead and do a lot of chopping, so you do that until it is all mixed in, and then what we want to do is we want to come in here, and we want to just flatten in out, okay and then we want to put this in the freezer, ideally for four hours, and that will make sure it is nice and ice cold, otherwise if it is not cold enough, when you try and roll it, it is going to not roll, so let’s put this in the freezer for four hours, and then we will roll it out. Okay we take it out of the freezer and then we work really quickly here, like that, like that, that, that, and like that. I got this bowl here, which I put in the freezer. I am going to do this one. Ice cream rolls, and then if you like, go ahead and I am going to put some cool whip on there, and then I am going to top it off with some chocolate chips, and some nuts. There you go amazing ice cream rolls made at home.

    This worked very well! It’s simple, and comes out great. It melts fast after rolling it so using a chilled bowl is better.

    Good heavens! What a delightful and innovative desert to serve up. It looked so easy, but is probably is quite tricky to master; however, I'm definitely gonna be making this over the holidays. :)

      Yes it is pretty awesome!! It can be a bit tricky for sure. I was able to do it my very first time, then had trouble a few times after that. A few tips, work quickly after you take the pan out of the freezer. if it is too warm in your house the ice cream melts quicker and won't roll haha, but if it doesn't wind up rolling right away, put it back in the freezer. And be patient leave it in the freezer for quite awhile. It is way fun to make though!

    Oh!! Thank you so, so much! I've been looking through all Brazilian CZcams channels for this recipe, because I'm from Brazil. And there are no videos with this recipe.. just with the ice cream dough ready and adding the flavors.. For me to get this basic dough recipe, I need to pay a course.. before I even test it to see if I can invest to open one ice cream roll company. I had all the ingredients at home and I made it, but I decided to make it with normal cream (without being fresh) and I made it with condensed milk.. and following all your tips. It worked, but the condensed milk is too sweet, and it didn't make the rolls. Today I'm going to make it following your recipe! I will tell you the result here! 😊😊

    I had some metal spatulas that worked pretty good instead of paint scrapers/putty knives :)

      Yep, whatever you can find that has that straight edge, is clean, and sturdy will work. If you watch them at the ice cream roll shops, they all use paint scrapers.

      Also if you want to make it quickly than you can put down a tower, dry ice and put the tray on it.

    do you think evaporated milk could work as a substitute for the heavy cream?

      Hi there, I think so, I haven't tried it, so can't say for certain. But I know you can make normal ice cream from evaporated milk. Although, I think the ones that use evaporated milk also use gelatin.

    How do you find the cream, and could you do it with just milk and sugar, for the base?

      The cream is sold in supermarkets. No, sorry, it won't work with just milk and sugar, you need the heavy whipping cream.

      Thanks! You probably just need to freeze it longer. And make sure to use the correct angle with the scraper.

      You can certainly try it! Just make sure you freeze the sheet pan first for a few hours. I want say I tried it in the past and it didn't work very well. But you can always give it a go and see. Worst case scenario you just wind up eating the unrolled ice cream off the pan haha if it doesn't roll correctly.

      You can give it a try, it may not harden as well. But give it a shot, I tried it a few times and it didn't work as well.

      Overnight is great. At the very least 4 hours anything more than that is ideal.

      Hello, you can always try it. Heavy cream is usually what you need. I don't know of a way to turn light cream into heavy cream.

      Hello, it depends on when you start. If you start in the morning you can have it after dinner or earlier. But the longer you allow it to freeze the better. :)

    I wonder if you take 2 pans. Fill one with water, then sit the other down in it. Froze them, then did this.. if it may work better?

      It probably needs to be metal but you can try something else. It just has to get super cold.

      Nope, you are at the mercy of how cold your freezer is. :) Unless you buy a professional ice cream roll maker.

      That may work, I have tried it before, it didn't work very well. But I may not have freezed it long enough either.

    Hi , can you tell me why I can only roll like 2 to 3 rolls and the other melts till I roll the first 3 , how can I stop that?

      Your pan needs to be really really cold, and if your home is warm it will melt quickly. Leave the pan in the freezer longer, and try and work more quickly. :)

      Place the pan in the freezer for at least 4 hours, but it works better if it is in there longer.

    Hi, when i pour my mixture on to my pan, it doesn't let me smooth it out before I put it in the freezer it's just watery any tips?

      Freeze it that way, it is okay if it is a little watery. If you notice in the video it is fairly watery. Are you using heavy cream? Or did you use milk?

      @@jackcurran6581 Yeah, it should be okay, if you notice in the video it is pretty watery still. the pan has to be extremely extremely cold for it not to be watery, which you only really get from a professional ice cream rolls maker. So make sure to freeze your pan for at least 4 hours or so before making it, then after making it, put it in the freezer for at least 4 hours or longer, the longer the better, before you try and roll it.

      @@7amsok You can do it that way. The stick way, helps add air to the cream. And that is how any shop that makes ice cream rolls does it.

      @@7amsok I don't know, but it sounds like it. Every country has different ingredients, I haven't tried them all so don't know what the equivalents are, you will just have to experiment. Which is fun! :) Good luck!
