In this episode of In the Kitchen with Matt I will show you how to make Ice Cream Rolls. Homemade Ice Cream rolls are pretty easy to make, although they can be a bit tricky at times, but I have some great trouble shooting tips that I give in the video to help you make them. Ice Cream Rolls originated in Thailand, and over there they call them "stir fried ice cream." Some day I will visit there and try real "Thai" Ice cream rolls, but for now I will make them at home. If I can make these, you can make these, let's get started!

Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor, today I am going to show you how to make ice cream rolls, oh yeah, I had a request to make ice cream rolls, so here we go we are going to make some ice cream rolls, they are pretty easy to do, a little tricky at times, but we can do it, let’s get started. First we want to take a sheet pan or like a skillet or something, and we want to get it really cold, so I would put this in the freezer, for a couple of hours, I have one in the freezer right now, now we take a small pot, and then what we are going to do is we are going to add, 1 fourth cup of heavy whipping cream, two tablespoons of whole milk, and then one tablespoon of sugar, simple as that, that is our ice cream base. Now let’s take this over to the stovetop and let’s heat it up. All right so what we want to do is we want to turn our heat up to medium high. And then we want to bring this to a boil, it is going to happen fairly quick, what we want to do is we want to dissolve the sugar into the milk and cream, and we want to stir it, keep stirring it. All right and you keep stirring it until you see bubbles like that, it is good to go, take it off of the heat, and now let’s go ahead and transfer it to a bowl, and then we want to chill this and let the liquid cool down, so I am going to put it in the refrigerator, for about 20 to 30 minutes. All right once our cream has cooled, I am going to take a couple of Oreo cookies, or you can use chocolate chip cookies, you could use strawberries, other kinds of fruit, a lot of different things you can put in here, I am going to just go ahead and dip these in there, soften them up a little bit, and then on your pan that has been chilled, let’s go ahead and just pour this on there, okay, and now for the fun part, chopping. We take a couple of paint scrapers or putty knifes, and we are going to go ahead and come in here, and you kind of just scrape things around and kind of chop these cookies, and mix it in with the cream, and what this is going to do, is it is going to incorporate and add air into the cream, which is going to help to make a nice, a nice creamy roll, just go ahead and do a lot of chopping, so you do that until it is all mixed in, and then what we want to do is we want to come in here, and we want to just flatten in out, okay and then we want to put this in the freezer, ideally for four hours, and that will make sure it is nice and ice cold, otherwise if it is not cold enough, when you try and roll it, it is going to not roll, so let’s put this in the freezer for four hours, and then we will roll it out. Okay we take it out of the freezer and then we work really quickly here, like that, like that, that, that, and like that. I got this bowl here, which I put in the freezer. I am going to do this one. Ice cream rolls, and then if you like, go ahead and I am going to put some cool whip on there, and then I am going to top it off with some chocolate chips, and some nuts. There you go amazing ice cream rolls made at home. - Jak na to + styl
This worked very well! It’s simple, and comes out great. It melts fast after rolling it so using a chilled bowl is better.
Yep definitely use a chilled bowl. Glad you tried it and liked it.
I love all your recipes and I love that the are mostly from scratch so people can use substitutes to compensate for food allergies! Keep it up!
Thank you so much I really appreciate it!! :)
Love your pfp lol

Thank you Ashley! I really appreciate it! :)
Good heavens! What a delightful and innovative desert to serve up. It looked so easy, but is probably is quite tricky to master; however, I'm definitely gonna be making this over the holidays. :)
Yes it is pretty awesome!! It can be a bit tricky for sure. I was able to do it my very first time, then had trouble a few times after that. A few tips, work quickly after you take the pan out of the freezer. if it is too warm in your house the ice cream melts quicker and won't roll haha, but if it doesn't wind up rolling right away, put it back in the freezer. And be patient leave it in the freezer for quite awhile. It is way fun to make though!
Telling an air sign to be patient is rather like telling the Moon not to shine. lol. But I will be giving this recipe a go, because I can be rather intrepid also. I like to play around with recipes. :)
I love how you made the ice cream roll!
Thank you! :)
Oh wow that looked wonderful

Oh!! Thank you so, so much! I've been looking through all Brazilian CZcams channels for this recipe, because I'm from Brazil. And there are no videos with this recipe.. just with the ice cream dough ready and adding the flavors.. For me to get this basic dough recipe, I need to pay a course.. before I even test it to see if I can invest to open one ice cream roll company. I'm so glad I found your recipe and taught us how to make it at home and without the machine. Again, thank you very much! 🙏💙🌟 God bless you
Glad you found it! Definitely try making it at home and let me know how it turns out. :) God bless you as well!
@@inthekitchenwithmatt For sure!! I did it yesterday, after watching your video. I had all the ingredients at home and I made it, but I decided to make it with normal cream (without being fresh) and I made it with condensed milk.. and following all your tips. It worked, but the condensed milk is too sweet, and it didn't make the rolls. Today I'm going to make it following your recipe! I will tell you the result here! 😊😊

I had some metal spatulas that worked pretty good instead of paint scrapers/putty knives :)
Yep, whatever you can find that has that straight edge, is clean, and sturdy will work. If you watch them at the ice cream roll shops, they all use paint scrapers.
Nice and easy..

do you think evaporated milk could work as a substitute for the heavy cream?
Hi there, I think so, I haven't tried it, so can't say for certain. But I know you can make normal ice cream from evaporated milk. Although, I think the ones that use evaporated milk also use gelatin.
In The Kitchen With Matt Ok thanks Matt! You deserve a million subs!

How do you find the cream, and could you do it with just milk and sugar, for the base?
The cream is sold in supermarkets. No, sorry, it won't work with just milk and sugar, you need the heavy whipping cream.
Hey matt, I love your videos. Just one question, when I made another recipe of rolled ice cream, when I tried to roll it, it jist turned into big rectangles so what should I do to prevent that
Thanks! You probably just need to freeze it longer. And make sure to use the correct angle with the scraper.
im not sure if i have the ingredients for this soo can i use normal ice cream from a store and just simply flatten it and rolled it?
You can certainly try it! Just make sure you freeze the sheet pan first for a few hours. I want say I tried it in the past and it didn't work very well. But you can always give it a go and see. Worst case scenario you just wind up eating the unrolled ice cream off the pan haha if it doesn't roll correctly.
Do you think it would work if I took regular store bought icecream and spread it on a tray then try to make rolls with it?
You can give it a try, it may not harden as well. But give it a shot, I tried it a few times and it didn't work as well.
can we put the stuffs in the freezer overnight? or its more than enough and wont work?..
Yes you can freeze over night. :)
THANK YOU!
You are very welcome!
Im just hoping its going to roll it will right?
Do you think you should chill it for over 4 hours for example over night or would it freeze to solid?
Overnight is great. At the very least 4 hours anything more than that is ideal.

Ok, sorry I didn't read the description box on the trailer version. Thanks!
No worries!! :) :) Yeah anytime I put up a trailer like this, most likely it is a cut of an earlier longer video. :)
Would light cream work... or is there anyway i can make light cream into heavy cream? Plz help!!!!
Hello, you can always try it. Heavy cream is usually what you need. I don't know of a way to turn light cream into heavy cream.
Hi I will be trying this out but how long in total does it take one day or just till the night
Hello, it depends on when you start. If you start in the morning you can have it after dinner or earlier. But the longer you allow it to freeze the better. :)
Thanks and does it work if u let freeze over night and make it in the moring?
@@mike12390 Yep!
Can I use fresh cream intead of heavy whipping cream?
Hello Zainab! :) It is possible, but I am not 100% sure, because here in the States heavy whipping cream is what we use. You can always give it a try and see. :) Let me know how it works.
This looks really nice! But I have a question, Can you just use milk and sugar or do you need to have heavy whipping cream?
Hello, no sorry you definitely need the heavy whipping cream. It won't work with just milk.
@@inthekitchenwithmatt OK! I don't have it now but I'm sure I'll get some later, Thank you!
@@Basement29 You are welcome!
Does it matter if it’s whole milk or can I use any type of milk
Whole, 2%, 1%, skim, will work, but you also need the cream of course.
Hey when I put it on the metal pan it seems a bit thin is that normal?
Yes it needs to be thin. :)
If I don’t have the tool that you have what can I use?
A normal spatula may work, or a dough cutter.
Can you pls do an instant pot recipie?
I have this Instant Pot video. czcams.com/video/99dS1MDDfNw/video.html
I wonder if you take 2 pans. Fill one with water, then sit the other down in it. Froze them, then did this.. if it may work better?
Worth trying!
Do you need a steel pan, or will any work
It probably needs to be metal but you can try something else. It just has to get super cold.
Any tips to make my pan freeze quickly
Nope, you are at the mercy of how cold your freezer is. :) Unless you buy a professional ice cream roll maker.
Hey brother how are you im getting started on my new roll business can you please please help me out with the base milk mix for my businesI don’t know to to so it or do i buy it of a website please help me out God bless you.
Hi, you make the ice cream base as I did in the video and buy the ingredients from the store.
@@inthekitchenwithmatt thank you
Also please what if i want the base to be vanilla flavor
@@kaidalsaidi9800 Use vanilla extract with the heavy cream. 1/2 tsp to 1 tsp.
@@kaidalsaidi9800 You are welcome!
I have a question can you just use regular ice cream if you melt down
That may work, I have tried it before, it didn't work very well. But I may not have freezed it long enough either.
Flavors
I mean
Hi , can you tell me why I can only roll like 2 to 3 rolls and the other melts till I roll the first 3 , how can I stop that?
Your pan needs to be really really cold, and if your home is warm it will melt quickly. Leave the pan in the freezer longer, and try and work more quickly. :)
@@inthekitchenwithmatt ok thanks a lot will try doing that 😀👍
@@mr.hussain7664 You are welcome!!
How do you freeze the pan?
Place the pan in the freezer for at least 4 hours, but it works better if it is in there longer.
Hi, when i pour my mixture on to my pan, it doesn't let me smooth it out before I put it in the freezer it's just watery any tips?
Freeze it that way, it is okay if it is a little watery. If you notice in the video it is fairly watery. Are you using heavy cream? Or did you use milk?
@@inthekitchenwithmatt both
@@jackcurran6581 Yeah, it should be okay, if you notice in the video it is pretty watery still. the pan has to be extremely extremely cold for it not to be watery, which you only really get from a professional ice cream rolls maker. So make sure to freeze your pan for at least 4 hours or so before making it, then after making it, put it in the freezer for at least 4 hours or longer, the longer the better, before you try and roll it.
Will it work with my roll ice cream machine
Yes it should
what can we replace instead of the heavy whipping cream?
Hello, sorry nothing can replace it. You can't make this kind of ice cream without cream. :) Do you have any kind of cream?
@@inthekitchenwithmatt thx for answering and finally we bought cream but it is called cooking & whipping cream does it work?
@@inthekitchenwithmatt and i have another question can i put the oreoes in the blender and then put them in the cream or do i stick to ur way?
@@7amsok You can do it that way. The stick way, helps add air to the cream. And that is how any shop that makes ice cream rolls does it.
@@7amsok I don't know, but it sounds like it. Every country has different ingredients, I haven't tried them all so don't know what the equivalents are, you will just have to experiment. Which is fun! :) Good luck!
How hours should we let it in freeze ?
3 to 4 hours. :)
❤️
Thank you!
What can we use instead of Oreo?
So many different things, other cookies, candy bars, etc.
