We did this in science class in middle school, but with coffee cans. Use a large coffee can in place of the large plastic bag and then roll it. Somewhere between the ice cream ball and this method.
I think rolling would be a lot easier.
emmymadeinjapan This method is really easier. And youâd want to use ice cream salt or rock salt. It brings the temp way, way down.
It's more fun, too. We passed them back and forth across the lab tables. It's a great thing to do with the kiddos.
What's a coffee can?

In all fairness you double bagged the icecream which would have insulated it from the cold more.

Regardless of how thin it is, the addition of another bag doubled and in some spots, like up the top (where the inside bag is folded over), quadrupled the insulating effect. The fact that plastic is non conductive adds to it's insulating properties
Yes, there would be a little bit of air between the two bags which would really insulate the inside.
Also salt was melting the ice so would have added double the ice then add more ice as it melted. Because at one point it was liberally just ice water.
It also helps to surround the bag with ice entirely, not just at the bottom. When I did this for a chemistry experiment, we actually put the bag and ice in a large container to shake it, like an empty coffee can/container or cookie tin.
When I was living in my van I would sometimes make ice cream from coffee creamer servings and sugar packets I got from McDonalds. I didn't use the double bag method; instead I stirred the cream mixture with a hardware paint stick inside a metal camp pot. The pot sat in a small styrofoam cooler with the ice and salt. It took about 20 minutes as well. A lot of work but it was free and a nice treat. Enjoyed this demo.

Made this at 4-H camp, had the girls cabin shake it up and they were in love. We added chocolate to the cream and got a subtle chocolate ice cream. To. Die. For. Especially when you're living in the woods with kids in 90 degree weather.

Ive tried this before! There is this channel called English Heritage and they have a series called "The Victorian Way". The series shows you how to make certain foods the Victorian way, and I must say it is very charming. I believe they have an icecream recipe. I would love to see you try to recreate the recipes from that series!

Itâs not butter on top, but lovely cream....itâll make butter or clotted cream etc. very quickly. I live in a rural area with lots of fresh, unpasteurized, milk available...I love this stuff

It takes a little longer than 5 minutes but I make ice cream every year in my classroom for science when we learn about mixtures and solutions. My students love it.
Emmy - a hint - if you add a bit of water (1/8 cup) between the cream bag and the doubling bag it will freeze faster because of enhanced conductivity. This should eliminate the time penalty you pay for the safety of double-bagging. If you are really into squeezing the bag to see if it ready, use schnapps or Drambuie instead of water. The schnapps won't freeze like the water will and you can use the schnapps for an extra special topping.
Yep. I'm not sure if it's accurate that salt actually reduces the overall temperature, but one thing it does for sure is reduce the freezing temperature of water. So the ice doesn't have to rise to 0C to start melting, which is good because 0C doesn't make ice cream. Liquid water is much better at exchanging heat with stuff than solid ice is, so having liquid water at less than 0C helps chill the ice cream mixture more quickly.
I am sure there is a very thin layer of air between the two bags. Air doesn't conduct heat anywhere near as well as water. The water provides a thermal bridge between the brine and the cream. And the salt does reduce the temperature of the brine. The temp of the ice in your fridge is probably 20 degrees F, and the salt will make that into brine at 20 F as well. And that brine conducts heat much better than the ice.
Make rock candy!
I bet some shake time could also be saved by chilling the mixture in the freezer for ten to fifteen minutes before shaking. Get it just above the freezing point.
And... Put the inner bag in first, then ice, then salt. That ensures there is ice all around.
It takes longer when double bagged because the second bag acts as an insulator.

Any space 'nelegable' or not will do it, as will the second layer of plastic... it's called friction, friction creates.... heat, even in 'neglegable' amounts. Seriously, it's called science.
I remember doing this all the time with my sister as a kid. We original got the recipe for it in a kidâs science experiment book. We would also add food coloring to get crazy colors.
(I also remember we would shake it for awhile, but sometime we didnât want to shake for that long so we would just stick it in the freezer half way through to firm up and it would still be fine.)
Being lactose intolerent doesn't stop me from eating ice-cream. I love ice-cream.
Excuse me that I comment random questions under your comment, but I always wondered whether other countrys (mainly US, tbh) do have lactose-free milk, cream, cheese and stuff? In Germany you can get those products almost everywhere, like regular milk but with the lactose removed. I would really appreciate an answer :)

@@marshmallowterror Lactose free milk can be found at most grocery stores in the US, and many times ice cream and some yogurt as well. For things like cream, cheese, etc., sometimes you need to go to a store that sells a lot of organic and specialty food items to find them. But regular grocery stores have been carrying more and more lactose free items over the years.

Hey Emmy! When I was a child I was in Girl Scouts and we would put the mixture in a small coffee container and put it in the ice (which was in a very large tin (coffee)) container and played âkick the canâ for around 10 minutes, we called it kick the can ice cream! :)

I remember we did this in my 1st grade class. We all had a small sandwich bag and made ourselves ice cream. I think this was for science, but everyone was so excited about ice cream that I donât think we learned much. đ

My mom would do this but with a gallon bag or ice cream in a coffee can of ice and salt. She would put it together and give it to us kids to take outside to roll around and play with for 30 mins or so, then we would bring it in and have ice vream. Itwas great for the summer and made good memories.
Hi Emmy, we actually made ice cream in a bag when I was at scouts' camp. On a hot summer day when there was no option of getting ice cream in the forest we would put the ingredients in a plastic bag and put it in a garbage bag with ice and salt and stand in a circle and toss the bag around till it was ready so it was really fun and also was very quick. we used ingredients such as instent pudding, heavy cream, sugar, vanilla, and some crushed Oreos. It was really fun and also tasty!!
Emmy this video brought back so many great memories from my childhood!!! We used to make this all the time when I was a kid. The second bag you used over the cream mix would be why it took longer, as well as taking it out every 5 minutes. We would shake it for as long as we could(usually about 10-15 mind) non stop and then check it. Hope you and your boys have fun making more!!

My physics teacher did this with us on the last day of school. It was awesome. We stood on a pathway and tossed it back and forth with our partner until it froze. It was a lot of fun! After, we pushed it into a bowl and added toppings.

I did something similar as a child using a small can and a bigger can. Place ice cream ingredients in small container, seal well with lid and tape. Put smaller container into bigger container. Add ice and salt. Seal outer container. Have a blast with the kiddos laughing and giggling as you all take turns rolling it on the floor for a half hour to forty five minutes. Eat delicious ice cream.

Hand cranked ice cream does the same thing, our family made ice cream all the time, everyone took turn of cranking

When I was in Girl Scouts, we did this. We put a mason jar with our ice cream mixture in the center of a large/ gallon sized coffee can and put the lid on the jar, then filled the cavity around the jar with ice and salt, then put the can lid on. We sat on the floor and rolled the can back and forth until done. I don't remember how long it took, as it was many years ago. Thank you for bringing back that memory!

the reason why it was so time consuming was because you should have used a lot more salt to decrease the temperature a lot instead of adding more ice.

I've been making homemade ice cream for over 50 years (I'm 71, taught by my ice cream loving grandmother). I've used manual and electric methods but I still buy store-bought because I'm basically lazy. But, when I run out of ice cream in the Summer I make my own in a pinch. HINT: NEVER use corn syrup rather use granulated or powdered sugar for better results. Also, blend a couple teaspoons of custard powder or flavored drink powder to your batch (use less vanilla though). Use a whisk to mix the ingredients before pouring into a Ziploc baggie to add more air for a lighter ice cream experience. Also, the double bag wasn't really an issue because your ice started out wet and looked partially thawed therefore it didn't get cold enough. Ice water doesn't make firm ice cream. Use the hardest ice straight from the freezer (and rock salt) to make your ice cream firm faster with minimum melting -- 5 minutes tops when the ice is super hard cold! Experiment with frozen fruit...canned and fresh will work too when partially frozen. Partially to fully frozen blueberries or strawberries are incredibly delicious! Mash a couple tablespoons of a ripe banana in with the vanilla ice cream mixture for a truly satisfying taste treat!

or with more creaminess, add abit of milk or coconutmilk, if you likeit vegan. no sugar, all healthy ice cream. also with strawberry and blueberries possible

I do that with bananas that I buy that are in danger of going bad before I get the chance to eat them, I just peel them, put them in a container or freezer bag and stick them in the freezer.

Donât use corn syrup. Itâs unnecessary and only adds calories etc. donât double bag unless you add some water to the second bag

I loved this! I did this in high school chemistry class, a hint, it happens much faster if you don't double bag (freezer bags are super hardy) and you put in half the ice and salt in, then the cream bag, and then the rest of the ice and salt with a dash of water. When we did it everyone was done within 8-10 min. Again love your videos!

we did a version of that recipe years ago, only we used coffee cans instead of ziplock bags. the kids rolled the big can around the living room and yep, we got ice cream. it melted faster than they could eat it, but it was a fun experience.

In grade school we would make butter for our "thanksgiving" potluck in a very similar way but with a mason jar. We also added shredded carrot to color the butter more yellowy-orange

Did this with my mom like 10 years ago or so. Only did it once and I dont remember exactly how it turned out but it was really fun to make. I always think about it whenever I eat ice cream to this day lol. Surprised I've never seen anyone do this technique until now
My boys did this in school but put the mixture into a mason jar and placed the mason jar inside a coffee can or lidded plastic container with the ice and salt. They rolled it around on the floor to get it mixed and hardened. It wasn't super hard but really nice.
