    싱싱한 오이를 생으로 먹을 수 있다는 것 자체가 귀족가문의 재력과 위상을 단적으로 보여주는 거에요.
    일단 저 당시 생오이는 구하기도 힘들고 운송도 쉽지 않은데 심지어 냉장고가 없으면 장기간 보존도 어려움. 피클오이도 아닌 생오이를 아이스크림 재료로 썼다는 건 이런 의미임.
    게다가 저 당시엔 현대적인 개념의 냉동고가 거의 없다시피 한 시대였기 때문에 아이스크림도 저렇게 그때그때 바로 만들어 먹지 않으면 안 되는 높으신 분들만의 전용 디저트였구요. 일단 얼음을 식자재로 아무 때나 구하는 것 자체가 서민들에게는 극히 어려운 일.
    즉 아이스크림+생오이 = 보존이 어려워 그때 그때 필요할 때마다 구해야 하는 귀한 음식재료를 두 가지나 합친 궁극의 사치품 요리. 나는 오이아이스크림을 저녁 식탁에 쉽게 선뜻 내놓을 수 있을 정도의 능력을 가진 귀족 혹은 돈 진짜 많은 부자라는 것을 은연 중에 과시할 수 있는 좋은 아이템.

    i remember my neighbor (who was from London) making a similar ice cream except it had orange and lime. she had a more modern contraption but said the recipe had been passed down for hundreds of years. i promise, it's super delicious (and a long time to make, but worth it)!

      I haven't tried it but I imagine it would be. I plan on making some but I'll either leave out or substitute the brandy with something else as I'm not a fan of the taste. Another old fashioned flavour I like in sweets is bay leaf. My nan used to use it to flavour blancmange, custards and cakes. She'd heat the milk she was going to use in the recipe with bay leaves in it and then let it steep.She'd then refrigerate it overnight and remove the leaves the next day before using the milk. It's used as a savoury flavour nowadays, but it really is nice in sweets.

      @TheFlower That really depends on the kind of cucumber you have.
      After cooking the cucumber, they sometimes get more bitter, so over all, the ice cream would be more on the savory than the sweet side.
      But if you choose a rather sweet cucumber and some sugar and f.e. blend it instead, it might taste more sweet.

    Wonderful, wonderful, but what amused me the most was that growing up in southwest Louisiana during the 1960's, we had exactly the same model ice cream maker (though much larger), a great big old wooden, barrel really, with the same mechanism, only ours had a few remnants of green paint. As I was a "big" boy, it was often my duty to sit on top of it, with a thick towel to protect my rear from the cold. The reason someone had to sit on the freezer while the cream was being churned was that when the wooden barrel is that large and the iron crank grows in proportion, the damned thing is completely un-churnable after about ten minutes, and it can take up to thirty or forty minutes!

      xansdad55 I have an old barrel ice cream maker that works like a charm. Instead of a hand crank, it uses an electric motor. I prefer rock salt with the ice to freeze it. I'm going to pull out the homemade ice cream. recipe for the fourth of July festivities

    In grade school, we did this with a small coffee can rolled around in a large coffee can. We rolled the large can to another student like a game until the cream in the smaller can was frozen.

    We made ice cream at Girl Scout camp one summer. We put the ice cream mix in a ziplock bag and then put that bag, salt, and ice into a bigger ziplock bag. Then we just shook it back and forth with our arms until thick. (Some brave souls even threw their bags at each other in a game!) Knowing how it was done back then is pretty cool.     To everyone wondering cucumber ice cream? Yes cucumbers are not just raw salad items or eye cooler as everyone in the west world deems it to be. There are a limited but good number of desserts prepared in many parts of the world such as cucumber dumplings, cakes, puddings, drinks, & of course ice cream & yet in those same counties, in other parts, you can find some people who are unaware​ of it & ask the same question as you. Let me tell you that when cucumbers are made into batters & when they are mixed with milk or milk products, they give a very light, sweet & distinct flavour you can't resist once you have it & also it has a special quality of lightness to it which doesn't fill your stomach heavily. But milk shake & ice cream is more popular & a must have.
    One Cuisine I suggest to refer to, because I'm from there : India (includes Goa , Mangalore (in Karnataka State) )
    PS: Don't forget to peel the skin before you use it for cooking, otherwise unwanted bitterness will be introduced.

    If I remember correctly through the many series I have watched on victorian life, during the victorian period ice cream was kind of a new invention. For the first time they were actually able to transport ice across the continent on refrigerated train cars so ice boxes became much more common in the manor homes.
    (Before this they would have only had a "cool room". This room would have been on the lowest level of the house and tiled on the floors and walls, with a marble slab. This is where they would have kept foods that could go bad if they got too warm, like meat.)
    Victorian's loved anything new so cooks really experimented with this new form of food and used to make all kinds of flavors of ice cream both savory and sweet. Pretty sure I have heard of meat flavored ice cream (maybe salmon?) Fruit flavored ice cream (which we still enjoy today) and maybe even ginger flavored ice cream to cleanse the pallet between courses.
    Before seeing this video I wouldn't have really thought about trying a cucumber flavored ice cream but I can see how this would be very cool and refreshing on a hot day so maybe this summer I will have to try and make some!

      The only thing I wouldn't be sure about is the sweetened cream. I've never made home made ice cream before. Is that just cream with sugar added? Maybe you could explain how this is made? What type of cream to use (heavy whipping?) and how much sugar to use for 1 pint?

      Mrs Crocombe just adds a bit of sugar to some thick cream to taste. Double cream would work fine for this, but whipping would also do the job. Good luck!

      The ice in Audley End's ice house would have been collected by the staff from nearby rivers and ponds - possibly the River Cam which runs through the grounds. Commercial ice houses also existed, with stock imported from Newfoundland and Alaska.

      They cut out blocks of ice during the winter, and buried them in sawdust. though why would they ship ice from Alaska to Great Britain if north-east USA is closer?
