How to Make Custard Pudding - The Victorian Way

    Today, Mrs Crocombe is making a very good custard pudding. In fact, this recipe is so tasty and simple to make that she's thinking of adding it to her notebook cookbook.

    INGREDIENTS
    750ml single cream
    5 sheets of gelatine, soaked in cold water
    Egg yolks from 4 large eggs (or 7 small)
    Orange flower water
    Brandy
    Blackcurrant jam (jelly)
    METHOD
    Take a quarter of the cream and heat it a little before adding the gelatine. Whisk the egg yolks and add the remaining cold cream. Whisk again, then add the quarter of heated cream.
    To thicken the mixture, place it in a pan and heat gently. Be careful not to curdle it.
    Once the custard has cooled, add the brandy and a little orange flower water before stirring.
    Line the mould with almond oil before pouring the custard in. Then, leave to chill until the custard has set.
    To finish, gently heat a little blackcurrant jam to make a contrasting sauce. Turn out the pudding from its mould and pour the sauce around the base of the custard pudding.

      Use too much orange flower water and it won't seem special. Use just a little bit every now and then to make it seem like a fancy treat- which it would be for anyone else. When you're as loaded as the Lord and Lady Braybrooke, you have to put effort into making things seem special.

      I have and... vanilla extract is better I've found. Orange flower water is rather common in north african cuisine for instance but I'm no fan personally.

    I made it for a dinner yesterday and it was great. I adapted the recipe a little bit, adding 1 package of Vanilla sugar to the pudding (instead the orange flower water) and I made a raspberry sauce with Port. It was delicious and really easy to prepare. Many thanks for sharing this recipe!!! Brilliant and delicious! :)

    I love how she subtly communicates with modern audiences in a historically acceptable way. Like saying isinglass was unavailable at the store, and that orange flower water is an “old fashioned flavor”. Not only is it a cool historical video but it’s also an effective recipe video. It doesn’t sacrifice one for the other.

      I think orange flower water would be like rose water but with blossoms from an orange tree. Kind of how there's cherry blossom flavoured stuff (popular in Japan and other places around the world, but not as popular in America) but instead it's orange blossom

      @@jocelynecupcake You're exactly right, it is the water from the orange blossom, which is probably related to the orange citrus fruit... Flower waters/extracts are used as natural flavorings for many things. I drunk new Rubicon hibiscus and rose flavoured fizzy drinks the other day.

      I think the whole point is you are supposed to make them and see how it is in real life. Though keeping in mind apples probably taste differently today than they did back then because fruits have been altered over the years
      MRE Crocombes apples were most likely much smaller or much larger than what you see here
