How to Make Custard Pudding - The Victorian Way

Today, Mrs Crocombe is making a very good custard pudding. In fact, this recipe is so tasty and simple to make that she's thinking of adding it to her notebook cookbook.
With her seal of approval, who are we to disagree?

INGREDIENTS
750ml single cream
5 sheets of gelatine, soaked in cold water
Egg yolks from 4 large eggs (or 7 small)
Orange flower water
Brandy
Blackcurrant jam (jelly)
METHOD
Take a quarter of the cream and heat it a little before adding the gelatine. Whisk the egg yolks and add the remaining cold cream. Whisk again, then add the quarter of heated cream.
To thicken the mixture, place it in a pan and heat gently. Be careful not to curdle it.
Once the custard has cooled, add the brandy and a little orange flower water before stirring.
Line the mould with almond oil before pouring the custard in. Then, leave to chill until the custard has set.
To finish, gently heat a little blackcurrant jam to make a contrasting sauce. Turn out the pudding from its mould and pour the sauce around the base of the custard pudding.

I think She meant that having too strong of an orange flavor would make it taste like it wasn’t a delicacy.
Use too much orange flower water and it won't seem special. Use just a little bit every now and then to make it seem like a fancy treat- which it would be for anyone else. When you're as loaded as the Lord and Lady Braybrooke, you have to put effort into making things seem special.

I have and... vanilla extract is better I've found. Orange flower water is rather common in north african cuisine for instance but I'm no fan personally.

I made it for a dinner yesterday and it was great. I adapted the recipe a little bit, adding 1 package of Vanilla sugar to the pudding (instead the orange flower water) and I made a raspberry sauce with Port. It was delicious and really easy to prepare. Many thanks for sharing this recipe!!! Brilliant and delicious! :)

I think orange flower water would be like rose water but with blossoms from an orange tree. Kind of how there's cherry blossom flavoured stuff (popular in Japan and other places around the world, but not as popular in America) but instead it's orange blossom
@@jocelynecupcake You're exactly right, it is the water from the orange blossom, which is probably related to the orange citrus fruit... Flower waters/extracts are used as natural flavorings for many things. I drunk new Rubicon hibiscus and rose flavoured fizzy drinks the other day.

Pretty sure she means she doesn’t want to make the pudding taste too much like one flavor, which would make it taste like a lower grade pudding.
Usually, back in time the lowerclass used alot of fragrance in food to mask the flavour of the low quality ingredients. This was mainly in 3rd world countries and spices.

@@lucyvlogandart5166 technically it’s Mrs, as even unmarried cooks (like Mrs. Crocombe) and housekeepers were considered upper staff and as such they were addressed with a Mrs. no matter their marital status as a sign of merit status in the house. Ms. or Miss would be the titles for lower servants like maids, although they were also addressed by first name as well.

May Madi i think what they mean is that it was the common flavour. we flavour almost everything like vanilla, so they were saying they the victorians did the same, but with orange flowers.

Go dig into stuff from a couple generations before these recipes. It'll literally say things like "to make a roaft of beef, take a goodly cutt of beef and there-to caft sugar, salt, and ginger, add good red wine, and cook in a slack oven until done."

That's the problem with old recipes. They were largely passed down orally by a mother twaching her daughter exactly how they made it, and the written ones were vague on the assumption that you'd OF COURSE play around with the measurements until you were satisfied with it.

I think the whole point is you are supposed to make them and see how it is in real life. Though keeping in mind apples probably taste differently today than they did back then because fruits have been altered over the years
