How to Make Trifle - The Victorian Way

    Mrs Crocombe is making trifle - one of Lord Braybrooke's favourite desserts. It's the perfect treat to follow any meal.
    INGREDIENTS
    100g leftover sponge cake
    100g ratafia biscuits or macaroons
    50 ml brandy
    125ml port or sherry
    1 teacup of jam
    100g crystallized fruit, such as ginger and cherries
    500ml custard (you need to add either 2x sheets of gelatine or 2 tbsp of cornflour to it when you are making it so that it will set)
    100g ground almonds
    1 ยผ pints whipping cream
    1tbsp caster sugar
    For the decoration:
    Slivered blanched almonds
    Small cubes of crystallised fruit
    Anything else you like (flowers are always nice - but be careful to choose edible varieties as some varieties of flowers can be dangerous to eat)
    METHOD
    Cut your sponge cake into slices. This recipe is excellent for using up leftover sponge cake. You may prefer to use a fatless sponge as it is slightly lighter.
    Layer these into a deep glass dish, and pour over the brandy.
    Spread your jam on top - you can use whatever flavor you like.
    Chop your fruit and add this in an even layer on top. Now add your macaroons or ratifia biscuits, and over this pour your port or sherry.
    Leave this to soak for 10-15 minutes.
    If you havenโ€™t any custard to hand, this is the time to make it. The custard needs to set, so if itโ€™s not got gelatin in, reheat and add 2 sheets (soaked first), or whisk up cornflour in a little milk, and add it to the hot custard. Add your ground almonds and allow to cool to room temperature then spread over your trifle evenly.
    Whip the cream into soft peaks for piping and add some sugar. Pipe this onto your custard, building up layers of cream.
    Decorate your trifle using almonds, crystallised fruit and edible flowers.

      It's what we call a West Country accent. The West Country is basically that peninsula of England that sticks out under Wales like a tail. My grandmother is from Somerset, one of the counties neighboring Devon where Avis Crocombe was from and speaks with the accent :)

      because Appalachia is where a lot of immigrants from the british west country ended up -- along with the Irish and the Scots. the southern accents are remnant of the 17th century british accents. dropping the g - in huntin' , whippin' etc was very british.

    I have made trifle several times, especially during winter holidays. I always make layers, repeating the same layers: cut or broken pieces of pound or sponge cake with lady finger biscuits lining the sides, toasted almonds, fresh raspberries, custard and sherry or Jameson's Whiskey at least 3 times, (deeper dishes should have 4- 10 layers) then top it with whipped cream, the prettiest raspberries and toasted almonds. Her trifle was very pretty, I have never seen trifle made with one layer, it certainly takes less time. Individual trifles are a fantastic way to serve guests. Large brandy glasses are great for 2 people to share, smaller glasses is a nice portion for one. This is an easier, neater way to serve trifle, especially in a restaurant. It looks very pretty, especially with at least 3 layers and topped with freshly whipped cream. Trifle keeps well, it can taste even better after a day. The cake, biscuits and vanilla custard take on a very thick pudding texture. It is a simple and fine dessert to serve a large amount of guests. Gingerbread souffle with candied ginger is a nice accompaniment for a holiday dinner.

    I was taught to make "Victorian" trifle many years ago using stale sponge ,sherry ,fruit compote with warmed jam ,custard ,whipped cream and toasted almonds to decorate .Once you do it the old fashioned way you will never go back, and will develop Mrs Crocombe's genteel sneer at the idea of tinned fruit ,quick setting jelly and other atrocities .

    I've never liked regular trifle. Something about jelly and canned fruit mixed with cream and sponge doesn't sit right with me. I'm glad to see a recipe that looks palatable! ๐Ÿ˜

      @@marybaker8582 in my cookbooks, that would be a cake that requires egg whites beaten VERY stiff (stiff peaks forming, and you should be able to make a lasting cut with a butter knife through the foam). The rest of the ingredients must be folded in gently. Angel Food cake is a good example, but there are other recipes that use the yolks, too.

    Ok, a tear just fell from my eye -- the candied flowers did it for me. I make trifles of many flavors -- with fresh everything -- but not like this one.       The best way to serve trifle is using a large spoon or ladle to scoop a portion into a bowl, aiming to catch all the layers if possible. Itโ€™s not as difficult as it seems, especially once the custard has set.

    My paternal grandmother's recipe employed such prodigious quantities of sherry that it was a running joke in the rest of the family, & I have memories of Christmases where there was always a "children's trifle" + an "adults' trifle", & surreptitious sampling of the adults' one out of curiosity would invariably lead to uncharacteristic high spirits + eventual vomiting in the garden bed, & then, inevitably, an early bedtime. ๐Ÿ˜‚
    Now, _I_ make it every Christmas. I am faithful to it in all but one aspect; I hate custard, so I substitute vanilla instant pudding, instead. Nanna's probably rolling in her grave, but at least the spirit (pun intended) lives on. ๐Ÿ˜‰

      Lucky you! I had never even heard of this dish before. Itโ€™s basically like my 10 year old self raided the pantry and put every I love into a bowl for one giant dessert. Well, minus the alcohol.
      I actually sent this to a friend of mine who is planning a very small and informal wedding. With the white cream and pretty flowers it could very well sub for a traditional wedding cake. And it could easily be homemade by one of the โ€šsupport crewโ€˜. ๐Ÿ˜€
