You can use air whipped into ice cream to make crystals smaller but the best way to ensure the smallest size crystals is the speed of reaching freezing temperature. The faster you can freeze a liquid the smaller the ice crystals. Thats why dippin dots (uses liquid nitrogen) is surprisingly smooth and creamy. And thats also how the rolled ice cream doesn't taste like just pure ice, the cream is spread thin enough that it freezes very quickly.

I also like all the topping you can get with rolled ice cream and how the toppings can be added actually inside of the ice cream to make new flavours.
I just paid 850 for a small at the boardwalk. I don't know about your thoughts but it was arguably the best dessert I ever had. It might not be as fluffy as real ice cream but it tastes more natural almost and fresher. Just all around an awesome experience
