Hey friends and welcome🌞 Let me bring you along on some of the food I ate this week that made me feel great! - reminder I didn't show you everything I ate, but instead I brought you along on only some of the delicious food I enjoyed!

Mushroom Latte:
1 heaping tsp reishi mushroom
1 heaping tsp lions mane mushroom
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp maple syrup
3/4 cup milk ( frothed )
Big Pan of Oven Baked Stuff:
1 small cooking onion
2 small / medium red skin potatoes
2 ribs of celery
1 large carrot
handful of white or cremini mushroom
4 cloves garlic
2 stacks kale
1/2 block extra firm tofu
1/3 cup chopped cilantro
1/4 cup chopped parsley
1/2 cup chopped basil
2-3 tbsp olive oil
2 tsp salt
1/2 tbsp black pepper
chilli flakes to taste
1 tsp dried oregano
1/2 tsp thyme
3 tbsp pumpkin seed ( **I recommend 1/3 cup chopped walnuts!!**)
1/2 cup dried basmati rice
1 1/4 cup water
- Preheat oven to 400F
- chop everything as shown, through everything into a oven safe large pan ( one with a lid preferably ) bake for 35-40 minutes
- serve with lemon juice!

I’m not vegan but I definitely would recommend picking a meal ..breakfast lunch or dinner and making that particular meal vegan the whole week …breakfast works probably be easiest …

Botanically speaking squash is a fruit because it is formed from a flower and contains seeds. However, because of the savory taste it is grouped with vegetables when speaking of cooking. Other foods like this: avocado, tomato, pumpkin, cucumber, and most peppers.
Rinsing or straining the quinoa helps to reduce the bitterness, and makes it really fluffy rather than mushy and sad
Thank you for this tip maybe it will make you like it if I try this method
It gets rid of the saponins which are bitter, they are what makes the dry quinoa soapy when you rinse it

I find rinsing quinoa takes away the bitterness! I know some people don’t tend to notice the bitterness of quinoa very much but I sure do when I don’t rinse it!!

you give me so much inspiration for food. i just started a new diet with basically no protein because i have a gene defect that doesnt allow my body to process it the same as others. i found it very difficult to find food to eat and make meals with but then realised most of what you eat is good as long as i dont add the protein. so thank you! you help more than you know!
You look so good with the glasses, no need for irritating contacts! Do you have a favorite brand of walking shoe? One that rolls your foot forward and feels springy? So hard to find decent shoes anymore

7:18 If you find you can't get the oil residue off the silicone baking mat, try using barkeeper's friend! Took me a LONG time to figure out how to remove all the oil no matter how many times I washed it 🤦🏽♀️

Avocados started growing in subtropical regions. There is not specific Avocado season. I live an California and there are hass avocados (and other tipes) everywhere year round. It's like nearly impossible to walk a block in a neighborhood without seeing an Avocado tree. I could go on a walk right now and pick a hundred avocados
There are also avocados that tend to be ripe more in certain seasons but it's different for different ones

To my knowledge, rinsing quinoa is just to supposedly make the flavor better because it rinses off a naturally occurring chemical on the outside of the quinoa that makes it taste more bitter. There may be another reason, but that’s just what I know of!:) I rarely rinse my quinoa.
My husband and I started taking a supplement that has macca in it recently. He works nights and is normally really tired on his first night off so I don't even bother him about getting busy the first night. The other day he was like "I know what we are doing tonight". I was like "my word!👀" that was some top tier 🤌🏾🤌🏾
