Never ever dry
Pork butt/shoulder is pretty forgiving. You have to try hard to dry that thing out. Pork loin, on the other hand, is very easy to overcook.

Easy easy easy!!! The fact that I watched this 47 second recipe and ended up with fantastic pulled pork is amazing! It didn’t take as long as I thought for my pulled pork to reach temp.
I also was bummed about the char at first, but it did add some good flavor.

Just tried out this recipe and it came out fantastic. Thank you. I will just say make sure if anyone is trying this, after the 3 hours. Spray it down 3 times a hour with either apple juice or Apple cider vinegar or even a combination of both😊

Pork butt is also called the pork shoulder because it comes from the shoulder region of the pig.

I did this, this weekend and pretty much followed all these steps and it was my best pulled pork yet. One thing no one ever mentions is if the pork butt is still hot, you need thick (cloth) gloves underneath plastic gloves or youll burn your hand. But thank you for this video, i dont think ill change this method from here on out.

2 things… first clean up the smoke. And thing B, loose the mustard binder. Bring it up to room temp and put your rub on, rest it with rub for an hour before going on the smoker. You will find that you get a better bark with better flavor. And throw some honey in with the brown sugar. You’ll like the difference I promise.
Yes she could have let her smoke clear out, but I have found that the mustard binder and applying the rub at the beginning, and then letting the meat sweat gives you a much better bark and flavor. I've been smoking meat for years and have tried both ways, the binders don't really matter as long as you have something for the rub to stick to. While your rub will stick to the juices of the meat if you put it on after letting it come up to room temp, it will layer the outside and won't truly absorb onto the meat, thus resulting in your rub burning, and coming off easily when testing it's tack. Overall though, there isn't much of a difference but if you are feeling lazy then you can always go with the meat juices binder instead of applying one for a better overall bark and texture.
Don't sleep on the mustard bro, I've been doing serious BBQ for over a decade now and when I discovered the mustard binder it was a game changer. This video is the closest I've ever seen to my method (not to toot my own horn but literally everyone says it's the best pulled pork they ever had) except after I put the mustard and rub on like 24 hours before I smoke it, and I leave it in a cooler for two hours. You would be surprised at the amount of people that pull it off the smoker before it gets to 203°. And usually people look at me like I'm crazy when I say now it has to sit in a cooler for two hours. So I give this channel props!

You can put it in the oven once you put foil on it. It doesn’t need smoke, just heat. Keep the temperature probe in it and have your phone tell you when it’s done. You can have your smoker all cleaned up before your meat is done.
Did this recipe slightly modfied, ate around 2 and a half pounds of it.. The meat has long since stopped sweating, but now I have the meat-sweats. Solid butt recipe.
