Easy Smoked White Queso Dip on the Traeger Ironwood 885 | Heath Riles BBQ

  • Which one of y’all doesn’t love cheese? I’m guessin’ none! My recipe for Smoked White Queso Dip is super simple and can be prepped in 15 minutes. This is a great, mostly hands-off recipe that is going to be the runaway hit at your next big party or tailgate. Just get those ingredients into a pan and get it going on the Traeger Ironwood 885. After a couple hours, add chips and your hungriest friends!

    INGREDIENTS:
    • 3/4 cup of milk
    • Can of lime and cilantro Rotel
    • 8oz block of cream cheese
    • 1lb of white American cheese diced
    • 1lb of Velveeta cheese diced
    • 1/2 lb of pepperjack cheese
    • 1 deseeded jalapeno chopped
    • 1 head of cilantro chopped
    • Heath Riles Garlic Jalapeno Rub
    DIRECTIONS:
    1. Get your grill to 300º.
    2. Mix the ingredients above in a disposable aluminum pan.
    3. Place the pan on your grill. Add 3/4 cup of milk to help with the consistency of your queso. Stir every 30 minutes.
    4. After 2 hours, or until your queso dip is completely melted, take off your grill and serve.
    5. Serve with chips, crackers, veggies, or whatever you'd like. Enjoy!

    Garlic Jalapeno is the base coat on literally everything that I cook. Definitely my "go to" seasoning. By the way...Congrats on the Memphis win!!

    I put a can of cream of mushroom soup in mine and that's all the moisture I need. Doesn't mess with the flavor at all. Good stuff

    Heath I made a chicken Mac and cheese out of this recipe and it was AMAZING! I used your chicken rub and smoked some chicken thighs over cherry wood and cut them up into this dip along with penne noodles and it will be on the menu in my house from now on! Thanks for another banger!!

    I agree on that Garlic Jalapeño Rub. I use mine on everything. I made some some wings in Air- Fryer and they were off the chain.

    Picked a container up of that Garlic Jalapeño Rub at Buccee’s in Foley, AL, the other day. It’s good stuff. Love it in scrambled eggs. I reckon it’s real good in this smoked queso dip.

      Mine did too! They started carrying both garlic jalapeño and the garlic butter. The garlic jalapeño is fantastic. The garlic butter is good too but not as good as the jalapeño in my opinion!

      I maybe used about a tablespoon. Can always add more or less depending on your preferences.

    Tried this three times and I can’t get it to turn out smooth. The cheese always turns out with a gritty/ grainy texture. I have no idea, am I cooking the cheese to hot???

      @@HeathRilesBBQ milk was added during all 3 cooks. But I am thinking with the pit boss 820 pellet smoker set at 300 the top rack was cooking way hotter causing the cheese to curdle. Practice makes perfect though! Thank you for sharing some of your ideas….

    I’ve tried to make queso dip 3 times, the last time the cheese didn’t melt properly. Wasnt happy all the effort only to have to wing it in the trash.
